Spinach and Bacon Quiche

This recipe was adapted from one from Paula Deen. I substituted cheddar cheese for swiss cheese.

6 large eggs
1 1/2 cups heavy cream
2 cups of chopped fresh baby spinach packed
1 pound of bacon cooked and crumbled
1 1/2 cup cheddar chesse
9 inch pie crust

Combine the eggs, cream add salt and pepper until well combined. Layer the spinach, bacon and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake at 375 for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
