This is the first of what I think will be 3 custom cabinet that I have envisioned for our dining room. This is a very functional cabinet so I am so excited about it. I will admit that I had originally planned one day to complete this task which including the electric wiring from the breaker box of 4 new outlets. This project ended up taking us 2 full days to complete. The most exciting part of this is the cost. We spent ZERO out of pocket for this. Here are the details on how we accomplished this. First we salvaged the hinges and handles from the cabinets that were removed several weeks ago. Next we used gift cards to Lowes that we earned via swagbucks. I am so excited to share this first step in the dining room.

Goal Update-
I had planned to post pictures of the “tower” that we are building in the Dinning room to house our internet including firewall and router. However this project is taking longer than expected so I will anticipate sharing those pictures as soon as it is finished. I have had some time to reflect back on 2016 especially in the area of our finances. Since I don’t have pictures to share, I thought this would be a good place to share some of my observations, along with updates regarding my goals for the month.
First let’s talk food. Last year, we spent a total of $7884.51, which averages out to be $657 a month. This amount is actually less than the $700 a month that I began the year with. It really surprised me to learn that it is almost $40 less a month than our spending in 2015. We have also significantly reduced the amounts we are spending on eating out. I order pizza on Friday night and used gift cards to pay for it. While eating and talking, we realized this was the first “take out pizza” we had eaten in six months! I shared several time that I was participating in an “eat out of your pantry challenge.” I am excited to say that as of today, my pantry floor is empty! I initially set my goal to spend $100 or less on food for the month. I have change this to $150 or less. The reason for the change is that I purchased 40# of chicken breast to be picked up the end of February. This week is the most difficult for me as we are starting to run out of the “normal” convenient meals but I am determined to make it work for the month. So far I have spent $131.11. I did go to both Food Lion and Aldi today. Aldi will be closing for the next six weeks and I wanted to grab a couple of items for our Super Bowl party. I have spent some time over the past few weeks looking at our budget and working on ways to make it work for us. My goal for the year is to spend $550 a month or less on groceries. Small action steps including eating out of the pantry and purchasing only the items we are out of until March this year.
The second challenge that I have decided to participate in is No Spend/Low Spend month. I am excited to say that so far this month, I have not paid for any extra items. The biggest reason for this is gift cards. Matt and I both are using several different strategies to make extra money. Most of the apps and Swagbucks rewards are paid in gift cards. I have been collecting and using these gift cards instead of spending money from our budget. So far this has been paying off. I know that February will be an expensive month because we have a cheer competition every weekend except the last one. However I need to focus on one month at a time. So January is a success.
A final note is that we will continue to budget $300 a month for gas and other vehicle expenses. I anticipate meeting this goal simply because both of our vehicles are in good repair and should not require additional spending this year.
5 Things Friday
- Today is my first paycheck of the year. We have started out on a much better foot than last year. We will be using cash only for purchase this year. I am determined to make a huge dent in our debit while continuing to enjoy activities including vacations with our family.
- The kids have missed three days this week due to the snow. I ended up with several short days.
- My parents watch the little kids this evening while both Matt and I worked. I was able to purchase pizza for dinner using gift cards from Mplaces/Cricket. I forgotten how good free food taste.
- One of my goal this year is to sort through all of our pictures that are currently stored in several different places. So far, I am making good progress with the cabinet over my desk completed. I hope to sort out a filing cabinet that we stored in the bathroom 4 years agl.
- We are continuing to work on getting our dining room together. I am hoping to share pictures of our progress tomorrow.
Menu Planning
Today is Snow Day #2 for us. The kids school has already been cancelled for tomorrow and I would bet a delay or closure again on Tuesday. I have a really short day at work tomorrow to begin with so even if I go regular schedule, we should still enjoy another day with extra time at home. I feel very confident and satisfied with our breakfast choices. I am also extremely hopefully to keep our grocery budget less than $100 this month as we have finally completed a plan for the month. You will notice more elaborate, read time consuming, meals at the beginning of the week.
Breakfast– Saturday- pancakes. Sunday- French toast Monday-Egg muffins Tuesday- baked oatmeal Wednesday- choices. Thursday- Choices Friday- Choices. Saturday- Pancakes Choices include : pancakes, baked oatmeal, eggs, grits, French toast, toast or cereal.
Lunch- Zach and Kendall have chicken and stars soup, chicken nuggets, ham and cheese roll up, homemade lunchable and chips w/salsa. I am taking left-overs this week.
Dinner- Saturday- Chicken Stew Dinner- Chicken Stew.
Sunday- Lunch- personal pizza on bread Dinner- shoulder roast with carrots and potatoes, deviled eggs and broccoli corn bread.
Monday- Copy cat lettuce wraps
Tuesday- Alice Springs chicken with sweet potatoes and pineapple
Wednesday- Sloppy joes and FF
Thursday- Stuffed green peppers
Friday- Leftovers or pizza.
Matt will be going to pick up buns for our sloppy joes along with eggs this week before our local Aldi closes for remodeling.
Final 5 Things Friday for 2016
- Today was my final paycheck of the year. It was nice to sit down and pay out the bills. I also spent some time looking at the budget in addition to trying to get a good idea of where we are financially and where we need to head in the next year. I am planning to share more on this later this weekend.
- We have been able to “earn” around $325 this month between apps on our phone and swagbucks. I realize that December is probably a big month but hope to earn at least $200 a month between Matt and myself.
- I get to enjoy a 3 day weekend, for me this is rare, in fact I think that this will not occur again until next Christmas. We also don’t have any plans to travel, so I have made a list of things I want to accomplish this weekend.
- Put away all the Christmas decorations- snow village will stay up until MLK day in January.
- Help to build platform for trampoline and get it bolted in place. We also need to come up with a plan to get rid of the old one.
- Move the small refrigerator to the building and help remove the cabinets hang above it. This is in anticipation of beginning the next stage in our kitchen remodel which is to build a new buffet and officially make a dining room.
- Re-organize the closet in the shower room in hope of starting my “major project of the year.”
- I have decided that I need to sort through and get an organizational system going for all the kids pictures, art work and certificates. I have books for pictures of Haley and Amanda but realized yesterday that I have over 10 years of pictures in drawers and cabinets that really need to be addressed. I honestly know this will be a MAJOR undertaking but am going to set it as a goal for the year so I will at least need to address it once a month.
- We spent the entire day shopping yesterday, it was loads of fun but exhausting. I really am having a hard time staying focus today so hopefully some extra sleep will help.
Monday Thoughts- 12/26/2016
- We really enjoyed Christmas yesterday, everyone was together at my parents on Christmas eve and then again for lunch at my house. We spent a couple of hours outside assembling the new trampoline.
- I don’t have a menu plan for this week, first we want to finish up most of the left-overs and second I am just being lazy. Today for lunch I brought out the two cheese balls from last night and added ham salad on crackers. The kids were excited to eat desert since we have enough for several more days.
- Matt and I both had to work today so I am planning to leave the Christmas decorations up until next weekend. I should have Saturday, Sunday and Monday off and may have half a day on Friday as well.
- The new dining room would out great and everyone was able to eat in the same room/area. I have decided I want to move around a couple of thing in addition to building a custom buffet on the wall closest to the kitchen.
- We have a water leak out front which means that we need to dig up the front yard yet again, 4 time this year, and replace the line that brings water into the house.
- Santa’s delivered a trampoline that was 2 foot wider than our old one so that we are now going to have to add boards to the platform before attaching it.
- I need to spend some time updating the blog especially the blog roll as now at least half of the bloggers I followed have stopped or moved on. My goal is to get it done this week.
- I should get at least one post if not two this week for the year in review, but now I am going to go watch the kids outside and do my nails.
5 Things Friday- Christmas Edition
- With my ever changing crazy schedule at work, I ended up having a half day off on Monday and another half day off today. I did enjoy the extra time with the kids today!
- I am actually head of schedule with our preparation for Christmas Day. I should only have a few hours of work tomorrow and then be able to enjoy the entire day off Sunday! Here is a list of my original plan, I have been able to go ahead and prepare all three of the casseroles today. I let each of the little kids help with one so it took twice as long but really was nice to spend extra time with them.
- The insurance company has already settled with me in regards to my fender bender last Friday. I am have really amazed and happy with how smooth it has been. After discussion with Matt, we are not going to have the van repaired, instead that money will go to pay on our planned Disney World trip.
- December has been an awesome month for extra money coming in. So far we have cashed in $200 for Swagbucks and at least 50 via Mplaces.

Menu Planning/ Preparation Work 12/19/2016
The week before Christmas, we are staying busy in addition to trying to get some things planned ahead. This year, we will have Christmas breakfast (baked oatmeal) head to church and then home for a huge meal with my parents. Christmas night we are going to have friends over for an snack/leftover festival. I like the idea of having lots of food but really don’t want to spend my entire day in the kitchen either on Christmas Eve or Christmas day, so I am trying to plan and get some preparation work done early in the week. Here is what our schedule for cooking ahead looks like so far, you will notice that I don’t have plan to do anything on Tuesday or Wednesday. The explanation for this is my work schedule, if I have extra time great but otherwise I am still prepared.
Sunday- Pull all recipes and finalize plans for food. Lunch will be Turkey and Ham, both in crockpots, squash casserole, pineapple casserole, stuffing, cranberry sauce, green bean casserole and cream corn. Desert will be pumpkin and sweet potato pie. Appetizers for dinner including cheese/meat ball, veggies and dip, chips with dip and 2 types of Mexican dip.
Monday- Cut up veggies including celery and onions for all dishes. Fry sausage for breakfast on Saturday morning and Mexician Dip.
Thursday- Sweet potatoes pies and pumpkin pie. Make cheese ball
Saturday- Assemble all casseroles and get everything in crock pots to start on Sunday morning- make sugar cookies for Santa. Cook cranberry sauce.
Of course we still need to eat this week and with all the planning and work for Christmas day it will be really easy to eat out without a plan. My goal for this week is no eating out!

Lunch- Zach and Kendall have chicken and stars soup, uncrustables and homemade lunchable. They are out of school on Thursday and Friday, Zach has already requested pizza Quesada . I have salad, and leftovers.
Dinner- Saturday- Lunch- chill Dinner- cowboy beans/chilli
Sunday- Lunch- Baked Potato bar. Dinner- Chicken cresant rolls

Interesting Weekend and Other Random Things
- I was heading home from work on Friday, when I was rear ended at a stoplight. I ended up with a massive headache and a few paint scratches on the back of the van. Saturday morning my headache was gone. I did start the process of filing a claim to have my van fixed but I have a feeling this may take a long time and more paperwork than I want to complete.
- Matt and I are continuing to work on earning money using several different apps. This month, we have been cashing out points for gift cards to use for food. One of the biggest expenses associated with our cheer trips is food. We have to eat at least one meal if not two or three each weekend. So far this month, we have use free money to purchase the following: $15 Taco Bell, $10 Burger King, $25 Papa Johns, $10 Dominos, $25 IHOP and $50 Chills. One of the main reason we have been so successful this month is taking advantage of special sales.
- Zach and Kendall have three days of school while Lily has four this week. I am working all week but we will start celebrating next Friday night when I get off work.
Bargain Brag
I always say that saving money is a life style, so today I want to share a few of the ways we are saving and/or earning money this month.
I had decided several months ago that I wanted to have the kids with matching Christmas clothes this year. In November, Kmart offered a sale on the dresses the girls are wearing. I was able to purchase the dresses for $8 each. Before ordering, I did check to make sure we had both girls a long shrug or sweater to wear with these as they are short sleeves. Their tights were purchased on a 40% off sale in addition to 5 coupon from e The Children’s Place for a total of $5. The most expensive part of the girls outfits were their shoes. We did find them on sale but still spent around $45 for both pair. Total for both girls outfits were $60- the average cost of one dress. Zach has had his red tie for several years now so all I needed to purchase for him was a black shirt. I found it at Walmart for $8. I really do love dressing all three for less than $100.
Our biggest expense is by far groceries. For this reason, we definitely try to use all the food we have and not waste or let any go bad. Last Saturday, we spent baking Christmas goodies in addition to make a 7-layer salad, deviled eggs and Mandarin Orange salad. We have used these as our sides for Saturday lunch, Monday dinner and plan to use again on Friday. Today, we had what the kids call a “leftover buffet” pick what you want to eat from the leftovers and enjoy. Matt and Lily have been able to make wraps and nachos at lunch with some leftovers as well. The tomatoes, we harvested from the garden are finally ripe. I decided to go ahead and cook these for use in soups later on. Finally, we purchased a bunch of bananas last Thursday, that are now really ripe. The kids decided that we would use them in a smoothie in the morning for breakfast.
Saving money means know what items you need in addition to recognizing the best deal on an item. The best example of this, is our purchase of razors from Amazon. Matt has a “favorite” razor that when it goes on sale I grab. He also is open to trying others as well. We did try the dollar shave club but simply were not impressed and after doing the math, it really is cheap for me to buy razors at CVS. Last night I noticed that Amazon had his favorite razor refills on sale. We grabbed a year supply for $20. This was definitely a case of know a good price and grabbing it.
