- We decided to go ahead and purchase a new refrigerator. After much thought and some shopping around, we will be rearranging the kitchen and playroom to accommodate a full size refrigerator in addition to the one full size and the drink one we currently have.
- Our November budget is already turning out better than October so as long as something does not pop up we should be back on track with budgeting.
- All three of the kids got excellent report cards and perfect attendance for the first quarter. Lily was more excited about perfect attendance than A honor roll. This is the first time in her school history that she has achieved perfect attendance.
- I am planning to set up the snow village tomorrow if I feel better than I do tonight. Matt has been so generous as to share his cold with me.
- I was bumped from behind today in the van. I am so thankful for the arms of protection that meant a small scratch on the van was all the damage and it did not even really affect my day as I decided not to file an accident report.

Thankful Thursday
I have learned that there is no way that I will remember or have time to post each day even on Facebook what I am thankful for, so I am going to attempt a weekly post for the month of November. My list of things I am thankful for this week…..
1. My personal relationship with Jesus Christ my Lord and Savior. I am also extremely grateful that he understands that I need reminders that he loves and cares for me and is involved in every part of my life.
2. My husband. We have survived high school twice already so things have to get easier the next three times.
3. My job. I am blessed to be working in the professional field that I love and be able to help support my family. I am also extremely bless to at least work at achieving a work home life balance.
4. My kids… yes all 5 of them. I seriously thought about using them to fill up the rest of my list but decided I could needed to find more things to be thankful for. I am still very blessed and thankful to watch EACH one grow and mature. They are special in very unique ways.
5. My new van. I really enjoying driving a vehicle that I trust to get me to and from where I am going. I am also so grateful for the little extra like sunroof and heated seats that I would never placed on a list but they are awesome.
October In Review
Blogging: Goal: 14 per month Actually 16 post for the month!
Weight: Goal: Met and maintain weight of 175. This goal will be considered met each month that weight loss is achieved and once this weight is achieved, each month maintained is considered achieved. I did make some small gains/loss in the area. The last two weeks have been a real struggle.
Spiritual- Goal. I want to spend time reading and or studying the Bible at least 5 days a week for the year. Does half met count? I was doing so well until this past week.
Financial Goals-
1. Full Fund the budget each month. Fail
2. Emergency Fund to $2000. Fail
3. Groceries: Goal is for $700. Fail
4. Gas: Spend $400 a month . Fail but not as bad as I thought $435 for the month.
5. Eating out- $200 another decrease from even the previous month!
Disney- GOAL MET!
October was a long hard month for us. Part of the reason was that it lasted 5 weeks, another contributing factor was the restocking that was needed after spending less than $400 for groceries in September. I am looking forward to November with a more confident air! We are focusing on our Disney vacation. In order to start the month in a positive way hear are a couple of things that hopefully will help me achieve more of the goals.
1. Gas prices continue to drop, we have just finished paying all taxes for vehicles for the year and currently I don’t know of any repair needs for the month. I will be counting gas for the trip as part of the regular budget so I expect to stay right at $400.
2. We have already made our monthly trip to Costco, did that today. We ended up spending less than $400. We will be picking up our chicken order from Zaycon tomorrow so that will show allow us to not purchase any more meat until January. My goal for the month is to keep the grocery budget to $500 which will help to fund several other areas of our budget.
3. Our trip is mostly paid for, I have already made a list and purchased all the items that I *think* we need expect for cheap rain ponchos. The kids all have spending money and I am going to use “Disney Rewards” to cover the Bippity Boppity Boutique for at least 2 of the kids. We will be eating our while traveling but this should be a minimal expense of less than $200. We did eat out today but the plan is to eat at home until we leave for the trip.

Saving on Saturday 10/24/2015
This weeks, we are saving on Saturday by cooking. Our schedule during the week and many weekends are very hectic, which in the past has lead to us eating out. I really do enjoy eating out however, my budget does not. I started tracking our eating out expenses back in June. I will admit up front that I have been extremely surprised by the amount that I discovered over the last 5 months. One of the most shocking aspects was that prior to Matt’s permanent job change in 2010, we ate out double what we do not if not triple. I know we have reduced our eating out tremendously so the numbers were a serious surprise. During June, July and August, I simply tracked the amount but over the past 2 months, I am working on reducing the amount. One of the huge purpose of cooking today was to provide options that are quick and easy for those crazy days when we need to eat on the run.
First thing this morning we complete our menu planning, this forced us to look at the week’s schedule and make some decisions. Today, Matt is work at a college football game, he needed to drive 30 minutes and arrive by 9:30, he will not be returning home till around 6 this evening. He decided to pack a protein bar to eat on the drive and also packed a “lunch” that he will be eating on the way home. This will eliminate a trip through the drive thru. The next decision we had to make was how many times can we afford to eat out? We have 3 evening this week that are going to be really busy so if we don’t plan than we have spent over $100 in eating out in one week. We decided that we would only eat out of Thursday. After some thinking and checking of the freezer, for one evening I will be making Hamburger Helper with pre-cooked beef and the other hectic evening will mean cowboy beans in the crock pot.
Now to the cooking, this morning we had a huge “country breakfast”. I have in the crockpot “Ranch BBQ chicken legs” and sweet potatoes baking in the oven for lunch. Lily has also made an orange mandarin salad. My goal for today is to have breakfast and lunch for tomorrow (Sunday) prepared today as well so that we can heat and eat. So far, I have peanut butter bars in the freezer for desert. I have used up the rest of potatoes purchased in September to make mashed potatoes that will be heated for lunch tomorrow in addition to freezing 2 other containers that we can use in the future. I will be making the meat loaf and sitting in the fridge along with a squash casserole. The only thing left will be the cranberry sauce that cooks in the small crockpot tomorrow. Before calling it a day, I will make apple pie baked oatmeal for breakfast in the morning. You probably notice that we will have a lot of “side dishes” left which we have planned to heat and use during the week to make dinner much easier to prepare in less than an hour. After much trial and error, for use have a lot of sides dishes and prepared ingredients such as cooked ground beef or chicken works better than have entire meals frozen for use. What helps you resist the drive thru?

Saving on Saturday
I have mentioned before that this is really a “choice/lifestyle” more than just here is what I saved at x store today. To illustrate, I want to blog about my weekend. I ended up with a ton of pictures, and don’t want to distract at all from the cuteness of the kids so I will limit pictures and post links to the pictures.
The weather over the past week has been predicting the possibility of a “freeze/frost” which turns out happened Saturday night. Many of the activities this weekend directly or indirectly related to this. Friday evening, Matt and I decided to go ahead and harvest all the green peppers and basil that were of any size. I ended up freezing 4 bags (1 cup ) of these and chopping up the remained for salads and cooking this coming week.
For breakfast, Saturday morning, we decided on BLT. I have been making our own bread for the past 18 months, only buying hot dog or hamburger buns. I wanted to use up the loaf so I could make fresh this weekend. We used both fresh lettuce and tomato from the garden. Most of the morning was spent digging sweet potatoes. Around lunch we decided to venture out to a fall festival at my best friend’s church. They provided chicken stew, hot dogs, homemade ice cream and kettle corn in addition to candy that was given as prizes. We ended up enjoying this so much that we spent 4 hours. After getting home, we fixed an easy dinner of grilled tenderloin and baked sweet potatoes. Kendall said that this was an AWESOME day, one of the best ever! Total spent $0. I was concerned a little about the drop in temperature so we chose to clean the oven last night in addition to completing several loads of laundry. The temperature in the house did drop to 67* but this is only a degree below where we set the heat so not a big deal. Unfortunately, I did not move the rising bread dough from the top of the stove and it actually cooked during the oven cleaning. We used old milk containers to cover our lettuce and cabbage plants from the freeze and picked all the tomatoes that were eatable prior to the temperature drop which turned out to be our first freeze. This is what our kitchen window looks like currently.
Sunday morning, we made biscuits and gravy for breakfast, I did freeze half of the gravy to use one morning when we don’t have the time to make it. For lunch, we had bacon cheeseburger pizza, This afternoon, I am going to head to CVS to pick up Diet Coke, Matt is taking Zach to registers for indoor soccer and Kendall has a friend over to play. We are choosing to eat at home in order to keep our spending down for the month. I realized this morning that all three of the little kids are in need of winter clothes. This afternoon I have made a list and contact a friend from whom I have previously bought clothes for Zach from. I should be able to purchase enough from her to set him for the winter at about 1/4 the regular cost, I am going to check out ebay and a couple of other sites to purchase the girls clothes before we head out to Winston in a couple of weeks. I may even check out a couple of consignment store, I just have not had much luck finding clothes for Lily at these before. As you can tell, we are doing a lot to try and stay within our budget no matter to surprises/changes that happen.

Monday Rant 10/5/2015
I am becoming increasingly frustrated with the public school system. But before you read any further let me bluntly state that I am good friends with several teacher and other school personnel. I am in no way blaming or shaming them, instead, I think the whole system in North Carolina needs to be overhauled and made better. Public school is really the one of only two viable options in my rural area. The other option would be home schooling and we don’t feet this is appropriate at this time either.
I refuse to fundraise for the school. It is not that I don’t think the school does not need or deserve extra monies but for me it is a matter of economics. Currently, we have 3 children in Elementary school, therefore in order to participate in any fundraising we would be expected to sell 3 times the amount. For example, each child is expected to sale 5 items, in order for us to participate we would need to sale 15 items. Another example is the magazine sale, no cost to you simply fill out 4 to 6 post cards with the name and address of family members. Sounds simple enough but even with a large family we don’t have 24 relatives that children are not in the same area to send these too and do I seriously want to send 3 times the junk mail to anyone?
Now that we have established those simple facts, let me start the real rant. I am sick of my children’s “free public education” costing more and more and more each week. To begin the school year, I paid school dues $7 each and purchased T-shirts in the appropriate color for each child to wear on fieldtrip and as part of “Titan Tuesday” each week. $51 dollars before the first day of school. To purchase a school lunch is $2.85 a day for each child, or $8.55 a day or $42.75 a week or $171 a month. Needless to say, none of the kids eats school food. I could and do feed all 5 of us at least 2 meals a day for this same $8.55. The first week of school, we received a notice and each of the kids was excited that they would be have “Future Fridays” this year. Each children should wear a shirt that represents their favorite high school or college. Does not sound like a bad idea until you do a bit of math 3 t-shirts at $20 a piece, which really is a low figure equals $60 for my family. This provided us with the opportunity to have both Kendall and Lily do math and discussed our priorities as a family. Guess what purchasing and participating in “future Fridays” did not make the list. Fortunately for use both school lunches and college t-shirts were an easy discussion to have with the kids.
“Fundraising opportunities” were easily addressed the first of September with a simple we don’t participate. The next request become a little bit harder but yet not impossible to deny. This was a request from the 2nd grade teachers that we “Donate” $20 so they can purchase a classroom software pack. Another no… I will gladly donate goldfish, paper towels, Kleenx or just about anything else (except candy) the class needs but not cash.
Next up in the category of things that we have to pay for at public school fieldtrips. Yes, they can be educational and yes the kids enjoy them but since when does it cost $18 and $14 for a fieldtrip. Just for the record, I did pay both of these without too much complaint but still.
Finally school pictures, I love pictures and I have always at least purchased an 8×10 for each grade. This year that will equal a total of $72 spent on school pictures. The bright side, I can purchase online instead of writing three separate checks.
5 Things Friday
1. I was so excited and surprised to get an email today that told me, we owe $300 less on our Disney trip than I had originally planned! This is HUGE! We have been planning and paying on this trip since February and our final payment is due mid-month.
2 I was able to sell 2 toys today and that gave me $50 to put in the budget this month.
3. We are experiencing a “rainy season” We have received rain every day for the past week and are predicted to receive an additional 4-12 inches of rain over the weekend. My plans include staying inside and long hot baths. The temperature is also a bit cool for North Carolina in October.
4. We currently are on week 4 without heating or cooling out house! This should help reduce our electric bill to under $200 for the month of October and hopefully November!
5. We made several huge grocery store trips yesterday and have already spent all but $16 of our grocery budget for the month. I am so disappointed in this but am already facing the fact that I seriously need to increase the budget to a more achievable amount. I need to do some research and figure out what a reasonable amount would be, any suggestions on where to find this information?
