Staycation

I have been very fortune over the last week to enjoy a very little work load and some much needed time off. I worked half days on Monday and Wednesday in addition to being completely on vacation Thursday- Sunday. I had planned this since early July but really wanted to keep it low key as we leave for our real vacation in less than a week.

I have been able to spend extra time with all three kids this week working on education stuff. I am so proud of the great reader that Kendall has become but I notice she is still working hard in Math. We have been working on learning money. I am hoping to use her spending money at the beach to continue this education. Lily is working ahead in Math, reviewing multiplication facts and is learning to keyboard. As an OT, keyboarding is what I consider a fundamental skill, however it is not taught at all in the public school system here so I am feeling the gap. Zach is officially a preschooler with one year before he will be starting Kindergarten. He is math minded but can only recognize numbers 1-5 and knows about half of his alphabet. My goal is for him to learn the entire alphabet prior to January so that Matt can teach him  to read as well.

I enjoyed a very low key birthday which involved three simple rules…1. No fighting 2. No whinnying and 3. No calorie counting.  We have eaten out twice today and I am totally guilty free with this!

The rest of the time I have been spending time reading, relaxing and at the same time preparing for the next month of full schedule.  We did go shopping in Winston and even spent several relaxing hours at the pool. I can definitely say this was a good break but a productive one as well.

10 Things Tuesday -8/5/2014

This is my favorite way of catching up with all the tidbits, so I hope you enjoy!

1. JCPenny’s sent me a $15 reward for my birthday, so I combined with a coupon they also sent to purchase a Liz Claiborne polo shirt and a sports bra for $8.32! SCORE!

2. My square foot garden had started looking really sad and dead but after removing all the squash plants, all but a couple of my bean plants and lots of dead branches from the tomato’s it is finally looking much better. We are still getting just a few tomatoes, peppers and cucumbers. We have enjoy a watermelon and cantaloupe as well. I am holding out hope that with our recent wetter weather we will get a decent sweet potato harvest in late October.

3. Someone at work  or a patient brought in a table full of tomatoes, corn, cucumbers and cantaloupe. After realizing, that three days later, most of the remaining tomatoes would not last over the weekend, I brought them home and made salsa. It honestly is the best salsa I have ever made. I was able to use the crock pot and froze several batches for use this winter.

4. My work has finally slow down a bit. I have been able to enjoy going into work around 10am for several days the last couple of weeks. This has given me a chance to work on “school” with the kids.  Zach is working on recognizing both letters and numbers. Kendall is work on money and her pencil grip and Lily is focusing on math skills and keyboarding.

5. The girls have really enjoyed piano lessons this summer and both are doing well. The teacher who is also a friend at our church has decided to continue this fall!  The only downfall is finding some wiggle room in our budget.

6. We have been able to eat at home without going to the store or out to eat for 5 days! I hope we can continue this trend.

7. I spent some time this weekend organizing pictures. I have actually been able to get the pictures from 2014 organized. I would love to find a way to print pictures on a regular basis, Any suggestions?

8. I have been able to exercise 3 time last week and I off to a good start for this week. I am continuing to loss weight and my next  milestone is 50 pounds!

9. Both Kendall and Lily started in cheerleading last night. Kendall really liked it but it was “a lot of work”

10. We are having some crazy summer weather, but at least Matt and the kids enjoyed a morning at the park!

40# of Ground Beef!

Matt and the girls picked up our Zaycon ground beef order. Zach got to enjoy some unexpected big sister time with both Haley and Amanda due to our central air problems.

We were unsure of what to expect but after ordering and enjoying several boxes of the chicken breast, I was hopefully. This meat was awesome. Matt placed the 4 tubes in the cooler with 2 ice packs from around 10:00 until 7pm. Either of the ice packs melted and the meat was still very cold.

I had been debating and thinking about the best possible use of this meat. In other words what do we need to do to get the most use with the least effort. I am pretty pleased with the results so I thought I would share with you.

I frozen 10# raw. 4 bags of 1.5# and 4 bags of 1#.  I will insert that I have been using regular sandwich bags for freezing and have not had any huge issues.

We ended up using 3# for making Taco Rice.  I am going to estimate that this is approximately 6 full meals. We usually keep a container in the fridge for a quick meal. I used 2 of my side by side crocks to simmer  the ingredients while working to prepare the rest of the meat. I am going to estimate this as 6 meals.

Next up in the third crock is Sloppy Joes. I used another 3 pounds of ground beef for this. I am going to estimate 3 total meals.

Matt loves Salisbury Steak so we also made 3# worth of these which totaled 5 additional meals. Last Saturday, I used around 10# of potatoes that were not looking the best to make mashed potatoes. So this is a quick and complete meal.

The remaining 21 pounds we browned with onion to be used in a variety of dishes as it is needed.

Overall meals = 45 meals
Total Time= 4 hours including clean up with both Matt and I work.

 

Organizing and Decluttering! 7/12/2014

I was inspired by this post. I actually had already decide on Thursday that we needed to rearrange/organize the office but after reading the post and seeing the difference, I decided that there were several areas of the house that also needed a little extra attention. So far, I have emptied the paper shredder twice and also thrown away several full bags of stuff. We have been able to reuse and repurpose many of the items, so the expense for this has been minimal $27 at this point!

In the office, we added 2 shelves to help eliminate some of the clutter on the desk top. I also purged the filing cabinet and moved some to a file box. All the office stuff now has a home in the office but it honestly does not feel any smaller.

photoAll the containers have been emptied out from other areas of the house. If you notice, I currently have 4 empty containers. My plan is to feel these with school supplies as they go on sale in the next several weeks. There is also a shelf that is above the one you see, I was able to remove all the “extra” food from my bedroom closet and place on this shelf.

I also was able to clean and organize my desk, in addition to cleaning out the storage cabinets above the desk. I still need to spend some additional time in these. My goal for this area is the end of the month.

There are two additional areas that still need some more organization. My goal is to complete at least one by next weekend. I have already started working in my closet and it feel bigger with all the items removed from the floor. I am planning to move some additional storage bins from the playroom so this will not be complete until after the playroom. I have also begun reorganizing the playroom. In fact, I am hoping to repurpose an entire shelving system from it.  Today, I started by moving all school supplies out of the playroom and into the stockpile clothes so this only leaves a few more items to move to free up the system.

I am very pleased with the progress but hope to keep the momentum going to finish this job.

Weekend Rambling

I have enjoyed 4 full days off work in a row!  I am excited and feeling accomplished that I just had to share all that we have been up to.

  • Both Friday and Saturday, we spent over 5 hours enjoying the pool. I can finally say that I have a tan now!
  • The weather has been awesome, much cooler than in the past week and much cooler than I expected, temperatures have been in the mid 80s by day and even some 50s at night.
  • Because of the nice weather, I was able to spend several hours working not only in our square foot garden but also working in the flower beds around the house. I am very pleased with the results!
  • The square foot garden continues to provide us with fresh vegetables daily, our cherry tomatoes are awesome! Hopefully by the end of the week, we will have some full size tomatoes to go with our cucumbers and squash. Because of the really hot weather, I am not sure if we will be getting any more beans this year but the kids loved planting and picking so they will be repeated next week.  My most exciting discovery this week has been that we have 4 watermelons and 2 cantaloupes growing! I can’t wait to eat these.
  • I have been grabbing some good deals at both CVS and Food Lion this week. I will say that I was most disappointed to find that Diet Coke was not on sale at Food Lion after being told it was by 2 different people.
  • Both the little girls are really enjoying swim team. Lily is now able to swim all 4 strokes but needs to work on her endurance. Kendall is able to swim the back stroke and freestyle without stopping. Kendall has also been working on the butterfly but I am not sure she will be able to compete in this stroke this year.
  • Our new dryer arrived on Saturday and we were able to dry a load of towels in less than an hour!
  • One of the best deals I got at Food Lion was ground chuck for $2.67 a pound, this afternoon in less than an hour, Matt and I put together 5 meals. We decided to combine the ground chuck with venison that we had previously purchased.  All the meals were frozen because we are still eating leftovers from Kendall’s party.  We packed 2 bags of cooked ground beef; these will be used for Hamburger Helper or other meals such as pizza that started with cooked meat. I made a meatloaf and cheeseburger pie and finally Matt made a container of Taco rice that we plan to take to the beach as a meal in August.
  • On Friday, which was the Fourth of July, Amanda came and took Kendall shopping for her birthday. She purchased a dress, 2 complete outfits, a pair of shorts and a couple of Disney shirts. Kendall is so excited to have new clothes to wear!  Haley decided to spend time with us as well. She actually went to the pool. The little kids absolute LOVE when their big sister spend time with them!
  • Tonight, all three of the little ones are attending Vacation Bible School at my brother’s church. I am excited and surprised because Zach wanted to go and did not even get upset when we left him eating with his cousin. I hope they all have a great time. This is the first time that Zach has been able to stay somewhere without either of his parents. He will sometimes stay at the child watch center at the YMCA but other time he refuses so for him to want to stay is AWESOME! I hope the trend continues all week!

Random Thoughts Thursday- Money Edition

Today, we have spent most of the day running errands and shopping so this is a great way to share my best deals of the day!

  • CVS paid me to take 4 tubes of Toothpaste today including 2 of the hard side bottle that are great for traveling. Total Spent $3.66, ECB back $4ECB and I did not start  ECB with any so this is definitely a profit.
  • We found 2 “Palm Tree Coolers” at “Five Below”. I can’t wait to use these at Kendall’s birthday party.
  • At BedBathandBeyond, the salesperson asked if I had any coupons, I replied “No, but I would take one if you can find one.” She said let me look. I ended up with a $5 off my purchase! I was able to buy a new steam iron and a melon baller for $19.05!!
  • Our first stop of the day was to purchase meat at one of the “local”  closest (20 miles) Meat Markets. We spent $185 for 15lbs of bacon, pork chops. hamburger patties, chicken nuggets, cube steak and 2 packs of steaks for grilling. All were processed and frozen within the past 24 hours. This is addition to our purchase of hamburger to be delivered in July should help us stay in budget for the rest of the Summer.
  • I am glad to say that June will still be our most expensive month of the year however God is providing so that it also appears that it  will biggest income month to date as well.

 

May In Review

As predicted May was a very busy and expensive month. In addition to our regular activities, everyone has been sick at one time or another this month. I updated yesterday with my financial goals but I am going to count it as a FAILURE over all. Hopefully things improve both health and financial wise in June! Here are my other goals

Blogging:  Goal: 15 per month  This is post number 15!  I am really excited this month because it has been a really struggle to post but I am going to try an keep up with things in June! Goal Met

Weight: Goal to exercise 3x a week and to be down to 150 by December 2014.  I have lost a total of 27# since the beginning of January!  I will admit to only going to work out once a week so I need to get back on track with this!

Overall I met 2/3 of my goals so that is a good month!

Random Tuesday Thoughts 5/6

Life is going at its usual hectic pace around here so this is the prefect way to update with things going on.

  • The highlight of the last week and most like of the entire month if not the entire year was the Christian music concert that Matt, myself and the little kids attended on Sunday. It was outside at our fairgrounds. We were able to see several bands including The Newsboys. It was awesome, we all enjoy!  One of the surprising things is that we were all able to wear matching shirts that we purchased for our last trip to Disney, 3 years ago!  I am going to try to post some of the picture tomorrow. We had awesome seats that left me with ringing ears.
  • This weekend, I am planning on a yard sale at my BFF house. The goal of any yard sale is to make $100 and I hope to exceed this goal. All proceeds will go toward cheerleading for the next year as both girls plan to be involved. I have a good idea of the money that will be needed in the next six months and it will be a huge stretch but as always God will provide!
  • Our square foot garden is growing. I was able to plant with the help of the kids the sweet potatoes last week. I hope that by the end of May we will be able to enjoy the fruits of our labor! One thing that the kids are really enjoying is each planted their own square of green beans. So far Kendall and Lily are tied for most plants growing.
  • Both Amanda and Haley will be starting or have started new jobs this month. I praying that they both enjoy working and can begin to save and get on a good financial track.
  • Last Saturday, I spent most of the morning weeding the flower beds around the house I am excited that the new flower bed we created in front of the house is growing.
  • The end of the school year is fast approaching with it comes lots of year-end events. Unfortunately, at work we getting  a new computer system the last week of the school year. I am being faced with some very tough decision about which activities to attend.
  • May is going to be a super expensive month but Matt has another new website on the horizon so I hope this will help offset the cost.
