Wordless Wednesday- Trip

One of our favorite things to do when we travel is EAT!  Our recent trip to Florida was even better because some of the time David cooked some of the best food I have ever eaten!

Cracker Barrel is our first traditional stop on a trip!

We celebrated Granny’s birthday at Disney Springs at Earl of Sandwich-one of our absolute favorites!

 

We also ate at Texas Roadhouse for dinner!

Our Best place that we ate is also our newest favorite place!  This will be a definite stop each trip to see Haley! These are called Bento boxes!

5 Things Friday

  1. It is the Friday before Christmas. Christmas is on Monday. We have exciting plans for every day between now and then.  Tomorow, we are hosting a dinner for friends.  Sunday is Christmas Eve services at church as well as my family Christmas.
  2. I have spent most of the day working on the dishes for the dinner. The kids have helped especially with the cleaning. We tried something new and I had everyone come in the kitchen, pick a recipe and then assembly. It worked super well!  We got 5 casseroles assembled in less than one hour!
  3. The kids requested and got to open one present tonight after dinner. Kendall is the happiest with her new journaling Bible ESV version.  Lily loved her present of makeup brushes until she saw Kendall!  Zach is confused. He opened a double pack of baseball for a pitching machine that he does not have.
  4. I am planning to get most of the breakfast items prepared ahead for Christmas morning. We are going to plan to breakfast all day along with some leftovers.  I do want to clean out my refrigerator and not let food go to waste.
  5. We leave for Florida in 5 days.  My mother, Amanda and Braxton will be joining us on this trip. We will spend 4 days in Florida including a day at Disney Spring and another Christmas celebration with Haley and her family!

5 Things Friday- Financial Version

  1. November is a really expensive month for us!  We have to pay taxes and purchase tags for the Tahoe, pay car insurance for six months and finish purchasing Christmas! Therefore, I have been trying my hardest to find ways to save money this month!
  2.  Our church was gifted pumpkins this year. I volunteered to bring home the leftovers after all the kids got to pick one. We brought home around 20. Lily has helped me roast and bag 4 for baking and cooking. I am also saving seeds to try and plant next year as well as roasting some seeds to eat. The remaining pumpkins will be used to supplement the chickens’ diets!
  3. Cancelled Discovery plus!  This is $7.99 a month. I was notified of a price increase so after talking it over we cancelled.
  4. Cancelled Disney Plus!   Again because of a price increase this is no longer something we needed. We have debated signing up for it again in combination with ESPN. The price would be basically the same as the price increase but with additional benefit.
  5. I decided to cancel the collisions insurance on my car.  The car is paid for and this saved around $150 for six months.

5 Things Friday

Some good and exciting things going on around here!

  1. The “baby” chickens have started to lay. We do have a rooster. The white chicken which I call “spas” appear to be our best layer. We have been getting consistent eggs every day for a week from her. The eggs are smaller and blue so easy to identify!
  2.  I purchased 50# of tomatoes from my favorite farm stand for $28 this week. I have topped off our supplies of salsa, diced tomatoes, and tomato sauce. I made 16 jars of enchilada sauce.  We currently have a pot of spaghetti sauce going which used half purchased tomatoes and half from our garden!
  3. We will continue to harvest from the garden, today it was 2 large cucumbers, green peppers, tomatoes and green beans and basil. But I will be pulling more dead plants this weekend and also not water for the rest of the season.
  4. In other weather related news!  Our windows are open!  This is so nice and hopefully will result in extra savings on our electric bill next month.
  5. We have planned two trips at least for me to Florida in December!  I love the warm weather!

5 Things Friday

  1. Today is my first day back at work from Spring Break!  I survived and really enjoyed my first day!
  2. I really enjoyed my birthday escape trip to Florida, we visited and stayed with Haley and David. We played cards several nights and even played BINGO on Sunday!
  3. On Friday of last week, we traveled an hour and half to Orlando to go to a Walmart near Disney. I really enjoyed this store but no one else did. We spent the rest of the day at Disney Springs.  Lunch was at “Earl of Sandwich” This is still my favorite place to eat at Disney Springs.
  4. Saturday we adventured out and found a perfect beach to spend a day. “Golden Sands Beach”  They had a grill and place to eat as well as easy access to the beach!  We also went to the inlet but it was not a good fit for us!
  5. Only Kendall and Zach went with us as Lily had to work. It was a different but fun trip that was just the escape I needed.

Tuesday Thoughts

  • The weather this year has been all out strange. We had none, zero, nada weather delays or cancellations during the school year, The first time in at least five years if not more. The spring was cool, we had only 1 80 degree day in May. And now this week, is expected to be rainy and 70 for the entire week!  I am really disappointed since this is my first week off work but I am working on things inside so hopefully I can spend more time outside very soon!
  • My biggest goal for the summer was to get at least 100 dinner meals in the freezer, I have made a start with 4 taco pastas and 3  pizza crust from yesterday.
  • Today, I went to the local Food Lion to find meat on sale because the sale ad changes tomorrow.  I am happy to say that I succeeded!  I was able to purchase the meat for at least 14 meals for $63 or $4.5 each!  This is huge when you are feeding 6 people.
  • I picked up a free 8×10 at CVS today!
  • I have been working on getting some financial things in order for Lily’s college and I am happy to say that the hardest part is done!
  • Yesterday, I booked our Disney trip for Spring 2024 and took advantage of a no interest offer for six months from the credit card.
  • The next thing to tackle is Lily graduation pictures. Hopefully I will get some posted tomorrow as well!
  • Dinner tonight is “beer can chicken in the insta pot” with modifications.

Disney Tips

I wanted to do a post about things that we did this trip that really worked for us so that we would not forget.

Make a plan!

Plan to arrive early to Hollywood Studios so that you can ride most things before lunch, watch shows in the afternoon and Star Wars Land in the evening. Fantasmic is great but not worth the effort to watch a second time.

Use the train in Magic Kingdom to jump between areas in the park, especially if doing Dumbo and Barnstormer.

Virtual cues open 1 hour earlier than stated. Join ASAP and then refresh as fast as can at the scheduled time.

In Animal Kingdom, ride the Safari in the morning. We rode right before closing and it was slow and fewer animals than we have seen before.

Tusker House is not worth the expenses at breakfast and neither is Chef Mickey’s.  Crystal Palace is a maybe but it is very time consuming so plan accordingly.

No  dining reservations on Epcot day- this allows for you to enjoy more food.

Always share your food at Epcot.

Schedule rest days after 2 park days and usually 2 days before leaving. Makes packing and leaving much easier.

Need an inflatable and bungee cords to identify the golf cart.

Metal refillable water bottles work best, ask for just cups of ice to refill.

Pretzels at the pool are a must but kids really only need an hour or so at the pool.

Plan to break up the trip on the way down_Savannah worked ok. And leave around 8am to return home!

 

5 Things Friday

  1. I have been really emotional this week. Probably the most emotional I have been in years. There are a couple of reasons. First, I am transitioning off a hormone I have been taking for a year.  Next is stress!
  2. Matt has a second surgery coming up on Tuesday. I am believing that this will be the final surgery!  This is hard on us on all levels. Physically- making sure everyone can get to and from everything!  Mentally- I don’t even need to describe this stress. Financially- We have been able to cover the cost of both surgeries, but we are stretch really really thin.  Emotionally-see above.
  3. Lily tested positive for COVID today. She has not experienced this before. We are trying to prevent it spreading to the rest of us!  She has been extremely tired with a sore throat.
  4. I am going to declare that first planting of green peppers a failure! We have one seed to germinate. We decided to go ahead and plant a second batch of orange peppers.  My plan was not to buy seeds this year, so I am hopefully we get a couple of plants from this one.  Tomatoes have started to grow!  We also planted kale and radish to feed the chickens.
  5. We have plans to clean the camper out tommorow so we can start preparing for our upcoming trip!
