Saving On Saturday

I have been really quiet the last two weekends, actually really busy. Today, I am going to share why.   Initially before purchasing the camper, we decided to add a couple of driveway spots by extending our current driveway. One of the main reason for that decision was the fact we just re-built our square foot garden beds this spring. Once we got the camper in the driveway, I realized how big it actually was  and then Amanda hit one of the bed with her new car, we decided to rethink .  It was decided that we needed to expand the driveway all the way to the road.   I debated and thought about how we could salvage as much or all of the beds.. I also knew that I did not need to worry about the dirt as it was totally useless and needed to be replaced.  The concrete guys offered to move the beds however I was not sure or even hopefully that they would maintain them in one piece so for the past two Saturdays, we have been working.

I ended up paying each kid $10 an hour to help with this huge mass undertaking. With a total of $200 spent to the kids each weekend.  We also needed to build a small retaining wall next to the driveway to prevent dirt from eroding into the driveway.   A third component of this massive project was the square cement pavers that we had place under and around the beds. I was able to purchase most on sale for between 75 cents and a dollar each, however currently they are costing $1.48 each.  We have over 100 of these.

I am so happy to save that we have managed to save all the pavers, move the beds and it actually appears like we plan the whole operation.

The garden beds have been moved and filled with dirt except for the new sweet potato bed and one last raised bed.  We decided to place two beds directly in front of the house.

The other beds are currently behind the beetle space.

I have no idea what we actually saved but I am very thankful that the entire project is complete.

 

Thankful Thursday

I so enjoy the month of November. It is uplifting and inspiring to hear and express gratitude.   I have tried and failed in the past with posting a thought each day of thankfulness both on line and on the blog. This year, I am going to keep it simple.  Of course I am very thankful for my family and friends.  I am thankful to see and spend time with my Mom on a regular basis.   I really enjoy modern conveniences such as central air and heat.   But this year, my goal is to post a thankful thought each Thursday of the month. And it can not be the simple things already listed above!

Today, I am thankful for the financial blessing that we have received and enjoyed over the past year. They have help us pay of debit expand our lifestyle a bit and find ways to spend quality time together. But today, I am thankful for these financial blessing because they have allowed us to face and work around an expected job loss with minimal changes to our lifestyle.

Matt’s last day of employment will be next Friday November 12th. The current plan is for him to start tackling a long list of task and repairs that need to be completed.  He will also be looking for another job but he is not forced to accept anything and we fully anticipate his unemployment to last around a year.  But of course our prayer is that God will direct our paths and present a job either today or a year from now that will be the perfect fit.

Tuesday Thoughts

  • Lily was rear ended on Friday while driving her car, unfortunately the person who hit her did not have license, insurance or a tag.  She is very shaken up and we are now trying to figure out what and how to fix her car.  She loves the car and wants it to be perfect. So this will be a huge balancing act.
  • I have declared November to be a no spending month.  I have even gone so far as to tell both Matt and myself that we do not need anything from Amazon!   I have gotten into a bad habit of eating breakfast out 2 to 3 times a week, in addition to my 2 or 3 days of lunch out.  I am definitely cutting back this month. We have been gifted 3 to 4 dozen eggs so it is much easier to find a different way to eat an egg for breakfast every day this week.
  • We have given in and turned on the heat on October 28th was the official date.  We should experience out first freeze this coming week.  The temperature today was a cool high of 59.  I am not ready for winter in fact, I would love to move to a spot with summer all year long!
  • The kids all did awesome during the first grading period of the year. Lily has all A/s even in her college classes. Kendall has all A’s and Zach has all A’s and B’s.
  • The past several weekend have been spent relocating the garden beds in order to expand the driveway.  Hopefully during the next 2 weeks we will be able to start some seeds in the green house.
  • We have harvested our sweet potatoes. This year was a very small harvest of sweet potatoes but small is better than no harvest at all.
  • Tonight for dinner, I took out our entire green bean harvest for the year, and it was all eaten. Again one family serving is better than no servings.

$5 Meals

I have added a new category $5 meals.  I want to first explain my rationale for adding this so late in the game. I enjoy reading lots of blogs. It often helps me with saving money and it also gives me so great ideas.  One of the consistent themes that I have been reading for several month is that the cost of food is rising.  I have read on some sites that the expectations is that all food prices would increase by 10% plus percent by the end of the year.    I am definitely starting to see this in my area. For example, a 10 pack of water flavors has been priced at $1.00 for at least 2 years.  This is my buy price and I can always find at Walmart.  Yesterday, the price had increased to $1.23 for the box.  Fortunately, I have worked really hard to stock both the freezer and pantries with enough supplies to last at least until December if not longer.   I decided that I also wanted to start a list of these $5 meals so that in the future, I can come back and rotate through them again!

Spaghetti sauce- this is definitely a family favorite. In fact, most everyone prefers this over jarred sauce.  I did not know if we would have enough tomatoes to restock this summer but it appears we do. I did not try and make any salsa or diced tomatoes but hopefully in the future we will be able to stock both the spaghettis sauce and other items.    The tomatoes are from the garden, I purchased around 40 plants for $36 this spring so I am averaging $1 per crockpot as my cost.  $1 green pepper, $0.50 onion (from freezer), basil and oregano were from the freezer from past years.  Garlic =$0.50 and 1 tablespoon of sugar.  $3 for the sauce and $1.00 for the pasta makes a hearty meal for all  of us less than $5.

Pasta Salad for lunch-  We all are taking lunch most days. The kids really don’t like sandwiches and I try to avoid bread whenever convent so that leaves a lot of decisions and lunch making.  We have found an easy solution- dressing up pasta salad.

I always purchase when I find for $1 a box.  We actually used 2 boxes to make 7 lunches.  I added Deli Ham that was purchased on clearance for $1.84, a half a block of colby jack cheese, purchased for something else, 2 boiled eggs, (ten cent each) and of course tomatoes from the garden.   Less than $5 for lunch for everyone that is filling and good!

Meal for under $5

I wanted to share a meal that cost us a total of $4.75 plus tax and made 7 meals. All five of us ate dinner. Kendall does not like meat so we placed her brat and some left-over corn in a lunch container. I added some pepperoni from the fridge and a tomato to the remaining pasta salad for my lunch tomorrow.

Brats, these were found on sale for $2.75 for a pack of 5. Each time I stop at the grocery store to grab milk or veggies, I always walk down the meat section just to see if I can find anything reduced.  I think these were purchased last April or May. They were in the freezer until yesterday.

Suddenly Salad- I usually stock up on these when I find them priced at $1 each.  We often make 2 boxes for a meal or use for our lunches.  I still have around 8 boxes in my pantry for future use. Kendall  made this while I went to the store for produce.

Corn on the cob!  I have been watching prices this summer in hopes of stocking up on these but since this is the cheapest I have found all year and the freezer is full. Guess we can enjoy now! We placed these in the shucks on the grill and man did everyone enjoy!

Saving on Saturday- Upcycling a Playhouse

The project for this weekend is to upcycle the old playhouse into a greenhouse.  The playhouse is at least 30 years old if not older. The kids are all to big for it.  It is very small inside so I wanted to make the most use of space available.

We have spent $0 at this point on the green house. The plastic and wood to secure the plastic were purchased with swagbucks gift cards that we earned. Matt and I decided that we we go ahead and purchase a watering system to use. We already have the rain barrel and by using rain water only we will basically save the cost of the system within a couple of year!

5 Things Friday

  1. Everyone except for Lily has a 3 day weekend. Lily is working all three days. The next scheduled holiday or break from school is Thanksgiving.
  2. Our project for the weekend is to convert the old playhouse to a green house. We will be removing the roof and replacing it with plastic. Adding shelves and a watering system. We are hoping to reuse most of the materials. The plastic has already been purchased with a gift card!  I will plan to share pictures this week.
  3. Zach has officially started baseball practice. We have agreed to let him play both rec ball and AAU team. The AAU team is only going to travel in state and hopefully less than 2 hours away.
  4. The weather has finally decided to start to cool down a bit. We have been at or above 90 degrees for most of the month of August.  Fortunately we have no more 90 degree days in the forecast but I expect it to be close to the end of September before we are able to turn off the air conditioning.
  5. This week we are having a drive way addition installed. It will also include cement around the garden boxes that we bulit in the spring. I can’t wait to have a finished product!

Saving Money

It feels like forever since I have been focused on saving money! I looked back on the blog and realized that in May we started survival mood which meet cooking without an oven. Our new oven did not arrive until after vacation in July. Exactly 2 weeks later our air conditioning went out. This was honestly one of the hardest times for me.  But I am very thankful to say that we have both a working stove and working air conditioning.  I also want to get a good handle and feel for our budget but this will also be changing in the next month.   I will post details once we have things finalized and money in hand!

Now to our ways of saving:

  • Using items already on hand to help improve the square foot garden. Today we placed the contents of my shredder on one of the garden beds. We also added the coffee grounds from the week and topped with a good dose of water from our rain barrels. We have also placed banana peels in water before pouring on the garden as well. Hopefully we will be able to improve the soil for the next year.
  • Ordering from Amazon-  I continue to shop for deals on subscribe and save!  We are expecting to be stocked up on soups by our next delivery date.  I am also watching for “deals” on any item that we use on a regular basis. This week I found “magic erasers” for fifteen cent each.  My goal is to eliminate the need to purchase items not on sale.
  • Making meals at home- We have eaten at home every day since Tuesday with two exceptions, Matt purchased Bagel  on Saturday morning and we enjoyed Sunday lunch with friends.  We are currently in the best financial position we have been in for many years so these small treats will remain part of our regular budget. Just not eating out every day and some times 2 times a day!
  • Packing lunches and making sure we have some convenient items on hand for lunches. The kids can eat lunch at school but for Zach this usually means more stomach issues and Kendall simply does not like most of the food.
  • Eating items from our pantry and freezer. Although I have spent $234 this month for groceries we are starting to look at and plan ahead for most meals. I have also added some treats that the kids enjoy!
  • Saving electric by turning off lights, using both the dishwasher and dryer at night so as not to add heat to the house.

Five Things Friday

  1. No Monday Menu will be posted this week. Next week our church is hosting Vacation Bible School from 6 to 8 Monday thur Thursday and a pool party on Friday. Dinner is provided for workers and their children.
  2. Our new oven has arrived!  I have been experimenting and getting use to it over the past couple of days. So far I am very impressed!
  3. With only 3 weeks left of summer vacation, I have established a couple of goals that I want to work toward which will make my life easier in the fall. First- prepare easy to heat and eat meals as much as possible. This week we have focused on making pizza dough. We have all the ingredients but it takes around 2 hours to make the dough. Kendall has made 12 this week. This will make for easy pizza in the fall. Simply unthaw the dough in the morning and add toppings. We also made 2 additional cheeseburger pizza toppings to add to the dough. Second- Stock up and organize the freezers and pantry.  This is also close to completion. I will be adding a couple of cookie, bread and cake mixes during the next week. Finally-enjoy lots of down time by sitting by the pool.
  4. Square Foot Garden- we are making plans to add cement to complete this area but I am also continue to try and figure out how I can improve the soil for next year. We are fortunate to get tomatoes but I am so frustrated that the money I spent on soil is basically worthless this year!
  5. July has turned out to be one of the most expensive months EVER but we are still holding our heads above water. I am ready to start reaping the benefits of all my bargains and saving.

Filling Up the Pantry.

I have mentioned before that I feel like we have a well stocked freezers.  So now I am trying to stock up the freezers with easy to prepare meals in addition to adding some needed items to the pantry.

I have been doing ALOT of shopping on Amazon this summer, in addition to it being the most convenient option for me, I have been able to find some great deals.  I am using scribe and save- the subscription service.   I am finding that some  deals offer some additional amounts off for your first shipment. I am setting reminders all over the place to go back and check prices to make sure that the second and future shipment are still at the great deal. If not it is not difficult to cancel but the trick waiting till around  a week before your shipment closes and then doing the math.  I have purchased snacks (30 cent or less per pack), hand soap, school supplies, rice and all vitamins. This week  I have found soup for around 80 cent a cup this is a HUGE convivence item for us!

Today I ventured out to Harris Teeter.  I have not shopped this grocery store in over 18 months. I LOVE their sales but with COVID and the distance to get to the store I just have not had a chance. Today I was getting some work on the van so I was  within a mile of a store.  I spent $33.45 and saved 53% according to the receipt! There was only one small catch, none of the items purchased were a need. They all were to add to the pantry. I grabbed 4 boxes of pasta at $0.79 cent each.  Canned beans, green beans and corn at thirty seven cent each and Hamburger helper at ninety-eight cent each. I admit that we use 2 boxes of Hamburger helper to one pound of ground beef but this is a quick and easy meal.

I am actually thinking that I have stocked up on most pantry items as well.  My plan is to only shop sales for the rest of the summer! This months groceries will be a regular month but hopefully I will be able to reduce the grocery budget by half for the rest of the year! $300 a month sounds very doable starting in August.
