5 Things Friday- Final Friday in 2022

  1. The extreme cold last week caused a little bit of panic for us. The automatic closing house vents that we purchased 18 months ago have started to fail. Meaning that we had 3 or so that did not close at all and another 3 that did not close completely.  Fortunately for us, our pipes did not freeze under the house, but we could feel a significant difference in the floor temperature. We decided to go ahead and replace these. The cost is not the issue as finding daylight hours to complete the project is.
  2. We have never been entirely happy with the very expensive sink faucet that we purchased and installed when we moved the kitchen sink.  It has started to become difficult to use, setting off our breaker on several occasions and requiring some engineering in order to continue to use.  Another decision was made to go ahead and replace it as well. We did decide to go with the low-tech option. Matt was able to install this in one evening.
  3. Positive news from the blast of cold air, although both of our water barrels frozen neither cracked so we did not need to replace either of these.
  4. Our chickens also survived the cold. We ended up adding some additional bedding and a separate water bucket which needed to be emptied and filled every day but otherwise they appear to be doing great!  The price of eggs has jumped to 4.49 a dozen so I am very hopeful that come March we will not need to purchase eggs!
  5.  After testing positive for the flu a week ago, my goal for this weekend is to get Christmas decorations put away, finish up some canning projects and make a couple of meals for the weeks to come!

5 Things Friday

  1.  Christmas is my favorite time of the year!   We actually have finished with all the decorating!   Lily and I will be headed to Disney in 17 days for a girls only graduation trip!  This is truely a  once in a lifetime experience!
  2. The weather is still really bizarre!  We have several days in the 60s followed by days in the 40s and it feels like it is raining every other day!  We have had so much rain that we are currently trying to figure out ways to dry up the water because we have standing water at the back of the coop.
  3. This weekend is very unique and special…. no plans for the entire weekend other than church. My goal is to get caught up on some cleaning and have an awesome pajama day.
  4. We have scheduled family pictures for December 26th and only one person is still in need of a shirt to wear.
  5. Groceries are the biggest area that I am noticing a difference in cost.  We have been over our grocery budget for 4 out of the last 5 months. And not just a little over WAY over!   I am going to try and reduce our spending on groceries for at least the next 3 months. I will adjust the budget to this year’s average in January but I also would like to reduce the amount we are spending along with adding freezer space that I can feel this summer.  My current goal is to spend $100 in the month of December.

Saving on Saturday

This is the Saturday after Thanksgiving so today is definitely different than most Saturdays! But here are a couple of ways we are saving today.

  1.  I have pressure canned 15 quarts and 2 pints of turkey stock.
  2. We are eating left-overs in various ways and forms.  Leftover sandwiches have been the biggest hit, but I made turkey sliders for dinner today which were also good.  My goal is to base the menu plan next week on what is still in the fridge instead of shopping in the freezer so stay tune for Monday!
  3. We are using the decorations that we already have. I did spend $37 on new sheets for my bed. And I placed an Amazon order for tent stakes and ways to connect the lights to Alexa.  Total holiday decoration spending $70! I did decide to use the same tree as last year and we dug out more lights that have been sitting in the box for years instead of purchasing more!
  4. My goal is to limit spending for Christmas this year as we prefer to spend time together and have lots of experiences.  I “need” to order one more gift, purchase gift cards for my nieces and purchase the experience for Amanda which is likely around $250 in order to complete Christmas shopping!
  5. My plan is to limit Grocery spending in the month of December to items we need for celebrating. Then for January, February and March only purchase items we are completely out of and eat on a regular basis. I am thinking diary and fruit will be the main items.

5 Things Friday

  1. Today is Veteran’s Day. We are being blessed by several friends and family members who have served in the military. So, it is important to us to say, “Thank you” and WE LOVE YOU!
  2. I had the day off work!  This is actually the first day that I have been at home since school started. Labor was spent in Florida and was a busy but fun time. Both the car and the Tahoe needed services appointments today and Zach had a doctor’s appointment.  Busy day off!
  3. We also experienced the second Tropical Storm this year. Not as much wind but several inches of rain have fallen. At least this time we have the automatic chicken door, so we did not have to worry about being outside.
  4. I have spent quite a bit of time in the kitchen today. I did go and purchase breakfast this morning. But I made stuffed green peppers for lunch.  For dinner Matt picked up a rotisserie chicken from Costco but I am a squash casserole, sweet potato casserole, stuffing and parmesan broccoli. This should give us several meal for the weekend. The chicken bones and skin are already in the crockpot for chicken broth that I plan to can tomorrow!
  5. It is snow village weekend!  The goal is to have the snow village assembled by Sunday! Here is a preview!

Saving on Saturday

A constant theme for my blog has always been the rising cost of food!  I have managed to keep our average monthly spending on groceries to around $500 to $700 for many years even with two babies in diapers.  But wow this year, things are going crazy.   We purchased a whole cow, and the garden has set a record but that has not been enough to control the spending.  All five of us eat breakfast, lunch and dinner from our supplies most days. Lily is home and can use water or something here but everyone else takes drinks to work and school.  We made a trip to Costco at the first of October to purchase mainly drinks. I grabbed a package of bath tissue because well because. I spent a total of $448 for this trip. I am in total shock! So again, I am trying to focus on reducing/ maintaining the cost of food!

We have actually been working on emptying our freezers since September and I can finally see a difference. We can now arrange the vegetable freezer so that things are not falling out and we have most of the meat in the chest freezer. As I was grabbing beef broth, I realized we were almost out.  I did not have room for the bones when I ordered the cow and we don’t have any steaks with bones. I did find multiple packs of short ribs.  The plan is to make the short ribs today and then use the bones for broth to can tomorrow.    I can’t remember if I post that we ended up cleaning out the hall clothes of towels and sheets and made it a food storage cabinet mainly for canning!

We had at least two nights this week with the temperature below freezing, so last Saturday, I pulled all the green tomatoes inside and feed the vines to the chickens.  I ended up dicing up several that had ripened to use in our stuff green pepper soup planned for Sunday. And stewed the remained that were ripe for Taco pasta on Tuesday!  Using it before it goes to waste or chicken feed in this case.

We have a set of lights that is currently not working in the kitchen/ dining room. Matt has been spending time trying to locate the problem.  It is a time-consuming task but at $100 an hour for an electrician, it is definitely a money saving endeavor.

5 Things Friday

  1. The weather:  We have had 2 nights with temperatures below freezing already!   I don’t like cold so it appears I will be going into hibernation soon.
  2. We received our Electric bill for the month of October. It is $153!  This is the lowest it has been since October 2020!  Yes I checked!
  3. Our best purchase so far for the chickens has been the automatic door. The chickens are going up at night and we don’t have to worry about something getting to them.  It opens at daylight and closes at dark. We are still checking on it since we discovered that it was closed accidently one evening this week.
  4. Kendall has decided that she will swim on the school swim team.  This is a huge first step for her!  She even had to approach the coach on her own to get the information!
  5. Zach missed two days of school this week due to being sick. I am glad we had a couple of extra COVID test. It was negative and he is old enough to stay at home without the need for an adult present to watch him sleep.

Fall Gardening

It feels like we are finally catching up on some projects and finding a rhythm to life these days!!!!

  • Matt has installed the automatic chicken door and so far it has worked perfectly. We are continuing to check to make sure that everyone makes it inside at night but this will make everyone’s life alot simpler!
  • The strong winds that we received form Ian a couple of weeks ago tore the plastic that we have been using for the greenhouse, originally our plan was to purchase plexi glass to cover the windows as we did with the one in the back.

But because the size of the other windows is odd, we were looking at $100 to purchase and repair. That was just not doable. So, we reused the plexiglass that had previously been a chicken door on the side facing one of the buildings and just used scrap wood on the other side. Matt also used scrap wood to fill the rest of the hole. Total cost $0

  •  The benefit of Ian is 225 gallons of rainwater stored.
  • The garden is starting to end. We still have some tomatoes ripening on the vine, green peppers are the most abundant they have been all year!  Zach harvest all the sweet potatoes this past weekend.

     

  • I have planted carrots in the sweet potato bed to see what we may be able to produce over the winter. I have cabbage, broccoli, and several varieties of lettuce all growing as well

Five Things Friday

  1. Hurricane Ian is upon us in North Carolina. This is a huge storm and we have actually been experiencing some of the wind and rain for the past 24 hours. Luckily, we have not lost electricity or internet yet (9pm).
  2. Both the school districts and the Community college all declared remote learning days today.  Everyone was able to spend time working on school and work assignments. I am actually excited to have the time to get my paperwork caught up!
  3. I am loving my new electric canner. I have been able to do a bath of pear sauce, a batch of kidney beans, a batch of navy beans and a batch of mix kidney and navy beans.  I had one can not to seal!  This is awesome. I am planning to make some split pea soup next.  My goal is to get really comfortable with the canner, start to empty out the freezers a little so that next year, the canner will be used for all my spaghetti sauce.
  4. Because I was at home, I actually prepared three meals today. Bacon and biscuits for breakfast, pigs in a blanket for lunch and homemade tomato soup for dinner. Kendall made a pumpkin cake which with grilled cheese was dinner to remember.  I tripled the recipe for the tomato soup, so we have lots for future use!
  5. Because of the storm we decided to leave the chickens in the coop today.  I purchased a second feeder. Zach has been to check on them twice.  Braxton also decided to spend the night.  This is the first time he has asked to spend the night so we are all so excited!

Tuesday Thoughts

  • As you have probably realized, we were out of town this weekend. Lily, Matt and I went on a campus tour of UNC-W on Friday. We drove down on Thursday and stayed until Sunday.
  • I spent an hour on the beach, we all enjoyed the lazy river, kids played in the pool. Putt Putt was enjoyed as well as a campfire and a couple of card games.
  • We also went to the outlets and enjoyed several hours of shopping
  • We have cleaned and winterized the camper. This includes using it as storage for coolers and plastic totes.
  • I started a batch of pear sauce and have plans to use the new electric canner this week.
  • We are staying very busy. I am still overwhelmed at work. Hopefully this will improve in October.
  • My health is improving, and I am hopeful to avoid a second surgery this year.
  • We have finally turned off the air conditioning which is very late for us. I would love to go any entire month with needing heat or air but the chances are very slim at this point.
  • After returning we have opened the rest of the chicken coop. The chickens are enjoying the extra space and practice flying from one end of the other. We have a automatic door to install but that is down the list.
  • My goal for the remaining three month include reducing the grocery budget and working our way through the freezer and pantry. I would love to do a no shopping challenge but not sure I am ready for that additional stress.
  • The garden is changing as well. We have added the rotating bottoms to the green stocks, we need to dig out sweet potatoes and plant that with carrots. The green beans are finishing and I need to purchase worms to add for the end of summer as well.

5 Things Friday

  1. We are still running our a/c with no end in sight. In fact next week, we are supposed to see temperatures reach 90*. I love summer and this warm weather is still extremely nice.  I know all good things must come to an end, but I am all about enjoying the last few weeks of warmth!
  2. We are starting to clean out the garden. I have been pulling a lot of dead plants and plan to go ahead and pull out the watermelon this weekend. I also have some lettuce cabbage and broccoli starting to grow as well.  I have been able to harvest green beans FINALLY!  Matt harvested 53 pears today as well. It appears that most have some bad spots, but I am hopefully to enjoy a couple and maybe even freeze a few.
  3. Lily has scheduled a couple of college visits over the next couple of months. I am excited but nervous as the expense of college is overwhelming for at least 3 more kids. I am currently encouraging her to stay at home and commute to college, but we shall see.
  4. Zach is enjoying playing football and all the kids have decided that high school football is a cool event. I am thankful that Zach is being allowed to play each game and so far a broken bracket is all the damage.
  5. After lots of research and debate, I have decided to purchase an electric/ digital canner. I am hopefully that this will take the scary part of canning away and allow me to preserve summer items for use all year long.  I also considered a dehydrator and freeze dryer but decided to try this first as it is a significantly less of an investment than the freeze dryer. Dehydrating is another option but I am currently using the green house to complete this on a small scale so purchasing equipment does not seem like the best thing to do right now!
