5 Things Friday- A Day Late

  1. We decided to go strawberry picking with the kids this morning. The local nursery offered BOGO on pick your own strawberries. We picked 4 gallons of strawberries for $18.  I did share some of these with both my mom and Amanda.
  2. After getting home and trying to decide where to put the strawberries, we discovered that our stand up freezer had stopped working. I was able to save milk and about a fourth of what was in the freezer.
  3. I found 3 gallons of half thawed strawberries so I decided to cook with these instead of the fresh one. I did end up flash freezing at least 2 gallons for future use.
  4. I made strawberry lemonade muffins, strawberry cream cheese coffee cake, and a double batch of strawberry jam. They all turned out awesome but my favorite is the strawberry jam.
  5. We will be having a yard sale hopefully next Saturday so this coming week is incredibly busy.

Grocery Shopping- My Way

I have been getting a couple of questions about the way I shop, so I am going to try and explain it along with the example of my shopping today.

Meat- My first choice is Zaycon food. Typically we buy chicken breast once every six months and other items usually about once a year. We currently have pork roast and pork chops in the freezer. The purchases of the other foods depend heavily on our need and ability to pick up when things are offered.  My second choice which is also more convenient is the “meat store” which is in the next town. Over the past three years we typically go and purchase meat about once every 5-6 months. We always buy ground beef in bulk and process by making several items but a lot of packages of pre-cooked meat. Other meat is typically purchased at Costco on an as needed bases.  Today I purchased 5 bags of shrimp at Harris Teeter, this should last a minimum of 6 months if not longer.

Health and Beauty Items, including toilet paper, I purchase on sale cycles at CVS or Harris Teeter. CVS is my only “weekly” trip because it is in town. I try and spent $1 or less on most items.  Toothpaste is always free and I currently have around 20 tubes in the stockpile. I always watch sales and try to keep things pretty well stocked up. For the first couple month of the year, we were able to reduce spending significantly and just use what we had. My goal is to try this again this summer.

Drinks- I am addicted to Diet Coke and I fully admit it. I usually purchase most of my drinks both can and bottles at CVS.  I try always to combine an ECB deal with free 12 pack coupons from Coke. Today however was the exception, we purchased 10 cases of soda at Harris Teeter on a Buy 2 Get 3 free sale. I also currently have 3 rain checks for cokes. Typically price for 2L is less than $1 and cans- 25cent each or less.

I purchase the majority of the rest of my groceries at Costco. Just like regular grocery stores they run sales and I tended to stock up on good deals. Today we purchased 3 boxes of Cheez-its and 2 boxes of gummies. These should last through the summer. I do also keep a watch on sales. I typically go to Harris Teeter every other month depending on when Super Doubles or great sales occur like today.  Food Lion is the only grocery store beside Walmart in my town so I will shop there for great deals and for their annual sale which is typically an additional 25 cent off house brand purchases. Aldi is also local and we grab our vegetables, canned foods and snack items there. I usually go to Aldi every two weeks.

Our Costco trip today ended up totaling close to $500 but this was a stock up trip because I honestly don’t plan or want to go back till at least the first of August if not the week before the kids return to school.  I enjoying shopping at Costco but tend to spend more than I should. Today’s trip included 8 gallons of milk, 7 dozen eggs and 4 packs of shells.

Monday Menu Plan

Things in our world are starting to get a little bit slower. We have another week for cheer and two weeks of soccer. Then we should get about a 3 week break prior to swim team. The other exciting news is six weeks till school is out.  We do have 3 days of extra activities at school this week during the day so the plan is simple.

Breakfast–  Saturday- Gravy Biscuits, Sunday- Bagels( Originally purchased for Matt’s birthday.  Choices will include toast, grits, leftovers French toast, cereal, breakfast bars, eggs or baked oatmeal.  We have several left-overs that need to be eaten this week and I hope to add some muffins as well.

Lunch- Kids have 3 days of chicken nuggets, a grab and go day and a veggie dipping day. I will be eating in the car 3 of 5 days this week travelling to the school so it should get interesting.

Dinner-  Saturday- Lunch- Sandwiches.   Dinner- Bacon Cheeseburger Pizza
Sunday- Lunch- Veggie plates (tomatoes, mac n cheese, cream corn, green beans.   Dinner- Grilled Chicken
Monday- Cheeseburger pie with slaw or cucumber relish
Tuesday-Leftovers
Wednesday- Pork chops with carrots and fruit
Thursday- ?? not sure but may be leftover or sandwiches or breakfast casserole
Friday- Baked ziti

Saving on Saturday-04/09/2016

Today has definitely been a day about saving, really more about saving time than money but they both are pretty important around here. First a little of the background, one of the ways that I have been trying to control our budget and spending this year is with grocery purchases.  We have only spent $1250 for the first three months of the year,   I focused on using the items that we had on hand and we were able to clean out and reorganize a lot of our freezer space.  In March, we used up all of our ground beef, so we need to start replenishing our supplies. On Thursday, Matt and I managed to make a huge grocery trip which included our local “meat market”.  Now back to today, we need to “process” the thirty pounds of ground beef we have purchased. I decided that since the weather outside was cold and windy, I would prefer to spend the day in the kitchen. I am very pleased with the results. Total time spent was approximately 7 hours, but this includes lunch and snacks for the kids as well as clean up and a couple of breaks. We were able to make the following:

3- cheeseburger pies (This are a quick and easy dinner to reheat)
4- Baked Ziti- We are sharing one with our friends for lunch tomorrow and another is already on our summer beach list. The other two will be easy Sunday lunches for this summer.
4 sets of Salisbury steaks- (a little bit more work than the cheeseburger pies but can turn out a dinner in 30 minutes).
20 one pound bags of pre-cooked ground beef. This is one of the easy ways to plan ahead and can be used in everything from spaghetti to Hamburger Helper.
Breakfast casserole for Sunday morning
Mexican rice and sausage dip for snacks and dinner today.

We will need to purchase chicken for delivery in June but otherwise we should be stocked up for the summer.

Monday Menu Post 3/21/2016

I can’t decide if I was excited or fearful when started pulling out food of the freezers for the next couple of weeks.  We did realize, we only have 1pound of uncooked ground beef.  Fortunately, we still have plenty of pork and quite a bit of chicken left. April will mean that we will need to buy meat to give us a good variety again. We did have to make a couple of changes in our monthly plan for this week but we should still be able to maintain the lower than normal grocery budget for March. I was excited to have time yesterday to re-stock some of our breakfast foods in addition to continuing to use items out of the freezers.

Breakfast–  Saturday-Matt was in charge, bacon biscuits, Sunday- Breakfast burritos with leftovers for the week. Monday- Apple muffins or Banana oatmeal cookies, these will also be leftovers. Thursday morning- Strawberries and cream baked oatmeal.  Other days choices will include toast, grits, leftovers French toast pop-tarts or grits,

Lunch-I was able to get the kids lunches packed for the three days they will be attending school this week. I have some soup that will be my main lunch meal this week.

Dinner-  Saturday- Lunch- Matt was in charge again.   Dinner- Shrimp Alfredo
Sunday- Lunch- Taco Soup.  Dinner- Grilled cheese sandwiches
Monday- Rice Creole
Tuesday-Grilled Chicken, green beans and squash casserole
Wednesday- Eating out for Haley’s Birthday
Thursday- Slow cooker beef and broccoli
Friday- Left-overs

The kids are out of school starting on Friday for an entire weeks so meals should get interesting!

Saving on Saturday 3/19/2016

sosThe weather has been warm and sunny the last week. This has made Saving a little bit easier for us. We decided to turn off the heat and air around 2 weeks ago and managed a solid 10 days without the use of either until today. I am hopefully that we can again turn it off next weekend. My goal is always to go an entire month without use either which will reduce our electric bill by approximately $100 for the month.

The warmer weather has also got me thinking about our garden. I purchased some new netting and some lawn fabric to use. The netting is specific to square foot garden but is also much cheaper than wire so I am hoping that it will last for several years. I am also trying something new this year. We still have sweet potatoes from our harvest in the fall, so I am trying to start a new crop from the ones we have. The kids enjoying helping with this project. I am not sure if this will give us enough but I am thinking that once I see it working I may start a second batch as well to equal the amount we planted last year.

imageI read last month that you could grow romaine lettuce using a similar water method. The red cup you see is out second head we have attempted. Last week, Zach and I planted the first one in the garden.

imageI realize that we may not be able to have a continual harvest and most like will only get a few extra leaves from this but as I have said before, every little bit helps.

Other areas of saving is our grocery budget, so far we have managed to spend $125 out of pocket for the month of March in addition to less than $1000 for the entire year so far.   This has been the best and most controlled my grocery budget has ever been. I will admit that monthly meal planning helps but we also are buying on a rotating schedule. Our March spending should remain well below $200 however I will need to purchase meat in April so the budget will again be higher.

Finally, I am attempting to save money by using Swagbucks. My goal for each month is to earn one $25 gift card.

Monday Menu Planning

March is going to an interesting month to say the least. First, I am once again planning to keep the grocery budget extremely low. One of the biggest way that this is happening is that we receive our American Express “reward” in the form of a Costco check. My goal for the month is to restock using this reward and $150. I am excited to say that so far I have spent less than $75.

Now on to menu planning: This weekend was different for us as we spent most of Saturday and all of Sunday out of town. We ate only 2 paid meals out. In more good news, I was able to restock some of our breakfast foods!

Breakfast–  Saturday-French toast, Sunday- hotel. Choice of muffins, toast, cereal or pop-tarts, French toast, grits, baked oatmeal  and breakfast burrito.

Lunch-I was able to get the kids lunches packed in addition to a couple of salads for my lunch as well. I have been purchasing lunch several days a week the past couple of weeks but this week it is back to packing from home!

Dinner-  Saturday- Lunch- PF Changs .   Dinner- Wraps and chips
Sunday- Lunch- Crackers, chips and cookies.  Dinner- Cracker Barrel
Monday- Salisbury Steak, rice and green beans
Tuesday-Cheeseburger Pie
Wednesday- Paula Deen Mac and cheese, Grilled Spam
Thursday- Shrimp alfredo or Turkey breast
Friday- Green Chicken Enchilla

Menu Planning

The month of February has been a lot off in many ways and I am looking forward to the new month! I have to admit that we had two rules for eating in February: 1) leftover clean out and 2) convient. Last week we ended up eating pizza bites and cheese sticks one night followed by Hamburger Helper the next. This weekend although busy, I feel like we have gotten back on track. Matt and I spent some time this afternoon making a new menu plan for the month. . The most impressive part is that we only repeated a couple of meals and I have at least 2 new meals to try out.

The Plan:

Breakfast–  Saturday-donuts/poptarts, Sunday- Bacon-Egg and cheese biscuits. Choice of muffins, toast, cereal or pop-tarts. I need to restock the breakfast choices over the next couple of weeks because we have really been cleaning out. One disadvantage for this week is that we currently have 2 eggs left in the fridge. I plan to either go to Aldi or Costco on Thursday depending on how the week shapes up. Until then we will be eating something just not eggs.

Lunch-I was  able to get the kids lunches packed in addition to a couple of salads for my lunch as well

Dinner-  Saturday- Lunch- East Coast Wings (after Cheer Competition) .   Dinner- Leftover s
Sunday- Lunch- Baked potatoes Dinner- Picnic dinner provided by my parents.
Monday- Hamburger and French fries
Tuesday-Chicken pot pie
Wednesday- pork chops, frozen flavor broccoli and fruit
Thursday- Shrimp alfredo
Friday- Grilled Chicken.

As  you will see in the update tomorrow, we have managed to keep the grocery budget for the month to $510 which means a total of $700 for the year. We are definitely telling a difference in the cabinets and freezers. But with a month of planning already complete, we should be able to keep the budget low again!

 

 

Menu Planning Monday 2/15

As I mentioned on Friday, menu planning went out the window this past week and my grocery spending actually hit outside the $400 I planned. I am beginning to see how the two are definitely related.  I did order several large storage buckets to use for bulk items such as flour and rice. I am starting a list of Costco and am planning to restrain myself until March if at all possible. I did cook several meals ahead of time on Sunday so hopefully we will stay on a better track this week.

Breakfast–  Saturday- biscuits, Sunday- Egg Spinach omelet. Monday- Baked Oatmeal, Tuesday- Trisha Yearwood Breakfast casserole, Wednesday and Friday- Frozen Muffins or Left-overs. Thursday-eggs.

Lunch-I have several containers of cabbage soup and will also take a salad for lunch. The kids will be eating chicken nuggets 3 days each, sandwiches the other days.

Dinner-  Saturday- Lunch- pizza bites.   Dinner- Leftover soup
Sunday- Lunch and Dinner- Taco Soup
Monday- Salisbury steak, rice, corn and peaches
Tuesday-Shepherd pie
Wednesday-Pork roast or pork chops
Thursday- Chicken and dressing in the crock pot with leftover cream corn and carrots?
Friday- Chicken fried rice.

 

January Money Diet Update

I am not surprised at all to say that several thing have occurred this month that I did not originally think about or plan for. Fortunately, we have adapted and managed to spend as little as possible. One of the bigger things that has happen is the sudden dramatic weather change that has brought us temperature not rising above freezing for several days in a row. I discovered that we had a significant draft in our living room. We were able to purchase and reduce this draft for around $20 but this was totally unplanned. Next up was a computer problem, we ended up purchasing a new operating system for one of our computers which was $130 but in addition after spending several hours working on and around this problem, Matt and I both needed a mental break and headed to Cracker Barrel for Dinner. I am honestly glad we did because after coming home it took another 3 hours to get the computer back to a workable state. I am really enjoying this diet challenge because it allows us to stop and thing before spending, even if we decide to spend the money.  Now on to more positive news.

1. Grocery spending of $200 or less- Currently I have spent $168 after both a trip to Costco and Aldi. I am so excited by this number. I don’t see any reason we can not stay in our goal for the month. We also went ahead today and did a rough menu plan for the month of February. I can see that we should be able to maintain a low budget of $400 or less for February!

2. Challenge #1– Give away 31 things- I have a box of kids clothing already packed and have a couple of options. I am going to make sure this box is gone before the end of the month.

3.Challenge #2– Figure your Net Worth-  I did not complete this totally simply because this number has no meaning to me at this point. What I have done is make a spreadsheet to keep up with real number as I work at paying off credit cards and other debits. I also know the value of all our vehicles. Finally today, I set up access to my retirement account so I can at least glance at it from time to time. As an interesting side note, it has lost over a thousand dollars in January already.

4. Challenge # 3- Do something to earn an extra $25 or more this month.– I have several items listed on Facebook for sale right now.

5. Challenge #4- Reduce at least one expense– I stay pretty on top of this to begin with. But I was able to get a $14 credit on our cable bill due, this month and finally think we have that bill straighten out. I do need to check on our cellphone bill to make sure it is as low as possible.

Overall I am happy with our progress and this challenge is definitely helping me to find some money that can be saved.
