Menu Planning Monday-01/18/2016

Matt is slowly convincing me to switch to a monthly menu plan. I like knowing what we are eating and what food we actually have in the house to eat but I also miss changing things up a little each week. On the positive side of that is that we are having a bigger variety simply because I know what is coming and don’t want to repeat.  I am also using the weekends for two things, first to eat up leftovers and second to try some new dishes to put in the rotation. This is definitely a different week for us because the kids are out of school for 3 days but most of the evening activities are continuing as scheduled.

Breakfast–  Saturday- Gravy biscuits (leftovers were froze and labeled for the beach), Sunday- Sausage balls and pancakes. We purchased some premade croissants at Costco last week so we will use these up one school morning. Leftovers included baked oatmeal, pancakes,muffins and French toast. Pop-tarts, grits and cereal are also some choices.

Lunch-I will be taking leftovers and using up the can soup I have at work. The kids will be eating tomato soup one day, grilled cheese sandwiches and leftovers as well.

Dinner-  Saturday- Lunch- leftovers and broccoli cornbread .   Dinner- Sweet potato soup– not sure we will have again but not a complete fail.
Sunday- Lunch-  5 ingredient Burrito casserole– this is a hit definitely going on February menu.    Dinner- Leftovers.
Monday- Rice Creole
Tuesday-Grilled chicken, carrots and fruit.
Wednesday-Pork Chops, green beans, left over stuffing and fruit.
Thursday- Country style steak, rice and fruit
Friday- Spaghetti and meatballs.

Random Thoughts

  • Matt picked up our pork order from Zaycon yesterday. It is awesome!  I received an email yesterday about a deposit/refund because we received a pound less of the pork tenderloin than was originally promised. We frozen 5 of the 6 tenderloins we received after cutting in half. Dinner on Wednesday will be the remaining tenderloin with lots of leftovers. After re-packaging I am thinking that we should have at least 6 months work of pork. This should average out to less than $4 a meal for pork.
  • Our new King size bed frame was delivered today, unfortunately the mattress will not be delivered until tomorrow. We started moving beds on Sunday to make like easier so tonight, we will be sleeping one last time in our queen size bed which is currently in it’s new home, Lily’s room. Lily and Kendall have been sharing a bed for the past 3 nights and at least Lily is waking up on time in the mornings.
  • Working is harder than I expected this week. I knew going in this would be a long week but I am so tired that all I want to do is go to bed, Hopefully by this weekend, I will find the energy to put away the snow village so that Matt can start work on expanding the kitchen soon.
  • Matt has let me know that he prefers menu planning by the month instead of weekly. This way he can change around meals as needed without having to worry about eating the same items several weeks in a row. Currently we have a plan through the first week of February. I am going to try this method for at least January and February. The real deciding factor will be if this method ends up saving money or not.
  • We are planning a grocery store trip to Costco on Thursday. This will be the deciding factor if we are able to stay on our $200 budget this month. So far I have spent $12 and plan to stick to as close to $100 at Costco as possible. I want to prove to myself that I can stick to a budget. Looking ahead both February and March will bring Zaycon meat orders. My goal is to use up food that is currently in our pantry and freezer for the first 4-5 months of the year, ultimately keeping the grocery budget at or below $500 for each of these months. I can then spend the summer months re-stocking the veggies and fruit from our garden.
  • I made a shepherd’s pie tonight for dinner and the kids LOVED it. In fact this is the second night in a row that everyone has eaten and we have no leftovers.

Menu Planning Monday

imageThese are my exact feeling about today. This is the first week since prior to Thanksgiving that we are back to a “normal” schedule. I will be honest and say that I have really enjoyed this past weekend. Being able to stay home and organize most of it. But all good things must come to an end so back to normal we go. The good news is that I have really focused on getting thing prepared for this first full week so that hopefully, I can still fit in all the things I need to. Menu planning is extremely important as I have slashed our grocery budget for the month of January and would really like to maintain a lower budget of around $500 for the first 4-5 months. I know these are lofty goals but I am going stay positive and attack one month at a time.  I realized that I had not posted a plan since mid November so for an update,we have really been focusing on eating good meals and making use of the leftovers that keep occurring. This weekend , we are eating one meal of leftovers a day. So far we are doing excellent with no food being thrown away due to spoiling. This week we have a trip to the Metrolina Eye on Thursday along with a cheerleading competition on Saturday.

Here is the plan :

Breakfast–  Breakfast burrito on Saturday (leftovers for the week), Baked oatmeal on Monday (leftovers for the week)muffins and French toast are in the freezer along with our staples of eggs, grits, poptarts, cereal and toast.

Lunch-The kids are really enjoying homemade “chicken dunks” for lunches so these are packed for 3 days with a sandwich and a grab n go day finishing up the week. I am finishing up lettuce in a salad on Monday and will be eating left overs for the rest.

Dinner-  No new meals this week as we are in survival mood at least for the first couple of weeks.
Saturday- Lunch- leftovers.   Dinner- Stuffed green pepper soup.
Sunday- Lunch-  baked sweet potatoes.    Dinner- Leftovers.
Monday- Salisbury steak, packet of mashed potatoes  and fruit cocktail.
Tuesday-Chicken pot pie.
Wednesday-Pork Chops, green beans, left over stuffing and fruit.
Thursday-Leftovers, soup or may be a meal out depending on time
Friday- Hamburger helper.

 

Food For Thought-

Today is my Mom’s birthday, which means we are fast approaching the end of the year. I am already in the process of looking and working on a budget for 2016. I will do a final update and set new goals hopefully this week but today I want to focus on Food.

  • Menu planning is still happening although I have not been posting the last couple of weeks have been about a couple of special meals and using up leftovers. This week we have already had a meal using meatballs my sister in law brought, tonight we made a roast and used some the sides we had left-over and tomorrow the plan is to use and make pork fried rice from leftover Christmas Eve shoulder. I am also adding some “convenient” meals to the freeze with the extra time we have this week.
  • Our grocery spending for the month is close to $900 which is way over budget. I have been taking advantage of some sells and stocking up, in addition to some extra meals and appetizers.
  • Our average monthly grocery spending for the year is at $691.59. I am totally amazed and excited for this number as it is under my $700 a month that I started in July.
  • I have been looking into some “average” numbers for grocery spending for our size family a “thrifty” plan is $770 and a “Low” plan is $1028 per month.
  • After finding these numbers I am very comfortable with maintaining our grocery spending to $700 a month. I am going to continue to focus on each month but not beat myself up for spending over now that I know it averages out within the year!
  • I was also able to find that the “average” family spends about $200 a month on eating out. In the past, I have not budgeted anything for eating out but this will become a regular expense in the year 2016.
  • We are starting the year with lots of meat in the freezer. I have already paid for 80# of pork that Matt will pick up the first week of January. We also just recently purchased chicken and a large order of ground beef. I am hopefully to not purchase any additional meat until March.
  • Our garden this year did well and we have been enjoying a variety of things. We have enlarged the garden to it’s capacity and hopefully will be able to multiply our freezing stock for the year.
  • I did not even attempt to lose weight with our trip to Disney and the holidays so I will back on track with eating healthier again in January.
  • Total random thought but at least it is food related. I just received in the mail a total of 6 free 12 packs expiring March 31. I will hold on till CVS offers ECBs or I just need them.

Day in the Life 12/17/2015-Cooking

My unscheduled time at home ends tomorrow, so I decided to spend the day by getting ahead. I have actually enjoyed cooking most of the week, probably because I had the time and energy to do it. With this in mind,  I wanted to go ahead and get ahead start of Christmas preparations as we will have family over for several meals in the next couple of weeks. I had a plan in mind and was able to actually finish everything on my updated list. However before cooking, I clean both the vacuum cleaner and did a quick clean of the floors.

On the  menu plan for today was cowboy beans, so I started by frying a pound of bacon and then browning a pound of hamburger for this. I realized as I was browning the hamburger that I should go ahead and make a pot of chill for baked potatoes next week. I ended up letting the second pound of hamburger sit in the pan to defrost. I also need to cut up onions for the beans. I love my pamper chef dicer but it is hard to clean so I went ahead and chopped up 6 cups of onions instead of the 2 cups I needed for the beans.  I decided to try bacon wrapped appetizers that we saw on Saturday morning. This was definitely a good call as Matt froze a bag so we would have some next weekend as well. They are awesome but time consuming. Next was a corned beef ball that will work as an appetizer for several times.

After checking our supplies, Matt and I decided to head to the local meat shop to make a purchase that should last till at least March. We  have ordered pork from Zaycon but want to add hamburger, cube steak and beef stew to the freezer. We also purchased chicken wings for our annual super bowl party. I was very impressed with our total of $113, which is 18 meals of meat.

I came back home to work on browning and freezing the 20# of ground beef. While this was cooking, I was able to finish up my day with candid pecans which will be a gift and desert on Sunday. I am very proud of the hard work that I put in today but also realize this gets me ahead for the next couple of weeks.

Monday Menu Post 12/14/2015

With me being at home with the shingles for this week, you will notice a little bit more complex meals for most evenings. This are usually food that we keep for the weekend but since I am at home might as well cook.

Breakfast–Orange cinnamon rolls and sausage ball on Saturday, Sunday- BLTs Monday- Waffles or French toast.  Tuesday- Banana baked oatmeal. Other choices include eggs, sausage, poptarts, grits, cereal, instant oatmeal and toast.

Lunch- We were able to pack all the kids lunches on Sunday. Each chose chicken nuggets for several days, sandwiches are on the menu another day as well.
Saturday- salad (we need to use up a bunch of lettuce that was purchased for $1.88
Sunday- meatloaf, squash casserole, left-over deviled eggs and potato salad from Saturday dinner.

Dinner- The side dishes will be brought out several times until they all get eaten or Matt and I finish them off at lunch.
Saturday- BBQ chicken legs, potato salad and deviled eggs, cookies for desert
Sunday- Copy Cat Lettuce Wraps-This were AWESOME! I did purchase both Sesame seed oil and hoisin sauce but will use for several times to decease the cost. Desert- Crockpot Apple cake
Monday- Cheeseburger Pizza using sour dough Desert- Pineapple casserole
Tuesday- Squash Lasagna Desert- brownies
Wednesday-Country style steak, all side should be left-overs except for corn? Desert- pound cake?
Thursday- Cowboy beans- Will plan to freeze half and this will also make at least 3 meals.
Friday- Spaghetti and meatballs- I am going back to work this day so back to quick and simple.

  1. In order to have enough time to enjoy our Christmas decoration and not feel so pressure to get things moving when we return from Disney. The plan is to get our tree up and decorated tomorrow. I am scaling way back on decorations  this year with less than 50% coming out of the attic. Christmas is still my favorite time of the year!
  2. Kendall had to sit in time out for the first time EVER because of her behavior at school. I do feel a little bit guilty because we have been crazy busy this week and the added excitement of our Disney trip probably contributed to the problem.
  3. Zach will play his first soccer game EVER on Sunday. I am excited but nervous especially since this league does not have any practices. We just show up and play.
  4. We are planning to celebrate Thanksgiving with my family this year. I do have to bring a couple of dishes and my have to work after our celebration but we still have so much to be thankful for.
  5. Our change in Menu planning appears to be working. I am hoping to not throw away any leftover prior to our trip!

Monday Menu Plan

We are trying a little something different with our meal planning this week. Instead of assigning a meal to every night and moving things around as needed. I have made a list of 15 meals that we plan to eat prior to our Disney trip. We brought all the ingredients up to make these meals and everything is currently store in the house. This way we can decided the day of what sounds good for dinner as well as use only ingredients we have on hand. In addition to trying this new menu plan approach, I want to really reduce the amount of food we have in our older refrigerators and freezers while we travel.

Breakfast–Pancakes and sausage ball on Saturday, left-over pancakes all week. Sunday- Orange glazed Cinnamon rolls, Monday- Baked oatmeal. Other choices include eggs, sausage, poptarts, grits and toast.

5 things Friday 11/13/2015

  1. Our new refrigerator arrived yesterday. Unfortunately the build in microwave would not fit so we sent it back. I LOVE the new fridge as it is huge!  We have enough room for all the food!
  2. My computer was acting up so I had to have a new hard drive install. The good news is that I was able to back up everything I thought important. The bad news is that I will be spending tomorrow reinstalling and getting the computer back to where I want it to be.
  3. We are still able to pick some lettuce and cabbage (finally) from the garden. The lettuce is almost gone but I have LOVED having it. We also have some tomatoes left in the window that were saved from the first frost. I am hoping to make some slaw and another dish this weekend with the cabbage.
  4. Our budget in November is still on track.
  5. I need to upload a lot of pictures from my phone and IPAD in anticipation of our trip to Disney. After finding storage I am planning to delete off both so I will have a lot of space!

 

Monday Menu Planning

This week menu planning takes on more importance as we purchased a new refrigerator and need to clean straighten and re-organize so that we can start on a right with the best use of space.

Breakfast–  Baked oatmeal on Sunday, eggs and sausage, grits, poptarts, cereal and toast.

Lunch- I thought I would share a little more about our lunches this week.
Monday- Everyone had a fresh salad. Tuesday- Homemade chicken dunks for Zach and Kendall. Lily chose a sandwich. Wednesday- No school. Thursday- Grab an go day- Each child picks 3 items which must include either a cereal bar or pack of crackers for lunch. Friday- Chicken dunks again.

Dinner- We have several different new meals this week as this is our least busy week for the month.

Saturday- Lunch- leftovers.   Dinner- White chicken chili
Sunday- Lunch- Meatballs and baked sweet potatoes.    Dinner- Pepper steak, rice and eggroll.
Monday- Cranberry Pork Roast, snap peas and fruit cocktail.
Tuesday-Grilled chicken, pineapple and corn.
Wednesday-Spaghetti and meatballs
Thursday-  Chicken and broccoli? or hamburger helper.(Depends on when new appliances arrive)
Friday- Taco Soup

My goal is also to make double portions of both Thursday and Friday dinner to freeze for use in the upcoming weeks.
