Saving on Saturday 10/24/2015

sosThis weeks, we are saving on Saturday by cooking.  Our schedule during the week and many weekends are very hectic, which in the past has lead to us eating out. I really do enjoy eating out however, my budget does not. I started tracking our eating out expenses back in June. I will admit up front that I have been extremely surprised by the amount that I discovered over the last 5 months. One of the most shocking aspects was that prior to Matt’s permanent job change in 2010, we ate out double what we do not if not triple. I know we have reduced our eating out tremendously so the numbers were a serious surprise.  During June, July and August, I simply tracked the amount but over the past 2 months, I am working on reducing the amount.  One of the huge purpose of cooking today was to provide options that are quick and easy for those crazy days when we need to eat on the run.

First thing this morning we complete our menu planning, this forced us to look at the week’s schedule and make some decisions. Today, Matt is work at a college football game, he needed to drive 30 minutes and arrive by 9:30, he will not be returning home till around 6 this evening. He decided to pack a protein bar to eat on the drive and also packed a “lunch” that he will be eating on the way home. This will eliminate a trip through the drive thru.  The next decision we had to make was how many times can we afford to eat out?  We have 3 evening this week that are going to be really busy so if we don’t plan than we have spent over $100 in eating out in one week. We decided that we would only eat out of Thursday.  After some thinking and checking of the freezer, for one evening I will be making Hamburger Helper with pre-cooked beef and the other hectic evening will mean cowboy beans in the crock pot.

Now to the cooking, this morning we had a huge “country breakfast”. I have in the crockpot “Ranch BBQ chicken legs” and sweet potatoes baking in the oven for lunch. Lily has also made an orange mandarin salad.  My goal for today is to have breakfast and lunch for tomorrow (Sunday) prepared today as well so that we can heat and eat.  So far, I have peanut butter bars in the freezer for desert. I have used up the rest of potatoes purchased in September to make mashed potatoes that will be heated for lunch tomorrow in addition to freezing 2 other containers that we can use in the future. I will be making the meat loaf and sitting in the fridge along with a squash casserole. The only thing left will be the cranberry sauce that cooks in the small crockpot tomorrow.  Before calling it a day, I will make apple pie baked oatmeal for breakfast in the morning. You probably notice that we will have a lot of “side dishes” left which we have planned to heat and use during the week to make dinner much easier to prepare in less than an hour.  After much trial and error, for use have a lot of sides dishes and prepared ingredients such as cooked ground beef or chicken works better than have entire meals frozen for use. Monday Menu Plan 10/19/2015

I am excited and proud to say that we did not eat out once this entire weekend! This is a huge accomplishment for us!

Here is the plan…

Breakfast–  Waffles, toast, baked oatmeal, breakfast bowls without potatoes.  Cereal and poptarts are an option but with it being chilly, we like hot food.

Lunch- Salad for everyone on Monday, several chicken nugget days for the kids. All lunches are packed and ready.

Dinner-  Hopefully we will stick with the plan again this week! .

Sunday- Lunch- Cheeseburger pizza.    Dinner-Broccoli and cheese soup.
Monday- Rosemary Pork Roast, carrots and stove top stuffing.
Tuesday- LEFTOVERS
Wednesday-Salisbury steak, rice and veggie
Thursday-  Coconut shrimp and French fries, mandarin orange salad.
Friday- Chicken fried rice.

We are trying to make some room in our freezers as we are scheduled to pick up 80# of chicken the first week of November.  So far for the month, we have spent $800.  My goal is to stay below $850 for the month.

Menu Planning Monday

We have reached the week this month that is the least busy for us!  I am definitely going to enjoy! Tuesday night we only have piano! Both Friday and Saturday have no plans- at least none that require us to leave the house.

The goal of menu planning this week is to not let anything go bad., We are fast approaching our first frost and it has been approximately two weeks since we purchased fresh fruit and veggie so we need to make good use of these items along with continuing to use anything we can harvest from the garden prior to our first frost.

Breakfast–  Homemade Breakfast bowls, Pancakes and Baked Oatmeal on Monday. Along with the easy cereal and toast. If we are able to clean out the fridge this week, I may plan to restock with muffins next weekend.

Lunch- The kids are planning to finish off the “uncrustables” along with a “dipping day” and a grab day.  I have already got my salad for Monday made. The rest of the week will be tuna salad or veggies as I am going to try and get back on my diet this week.

Dinner-  We are planning to eat at home everyday this week, even with dentist appointments on Thursday.

Sunday- Lunch- Dinner out of Amanda’s birthday.    Dinner-Hamburgers and French fries.
Monday- Chicken fried rice.
Tuesday- Rice creole and fruit.
Wednesday-Grilled chicken salad. This will make some good lunches for me next week.
Thursday-  Baked Potatoes
Friday- Cowboy beans out of the freezer.

Menu Planning and other Rambling Thoughts

We have really implemented menu planning into our regular routine, Saturday morning after breakfast. This is one of the few times Matt and I can actually sit down and discuss what we want to cook, look in the pantry and cabinets without being in a rush. This morning we also talked about trying to “clean out the freezers as much as possible” prior to our Disney Trip. I don’t usually worry about the freezers in the building as I do about something happening to the smaller freezers in the house.  The plan/goal currently is to eat and use as much as possible in the next 54 days and only pay small amounts of food if needed with no big stock ups.  I honestly don’t thing this is very hard as I was really deliberate about buying and completely restocking our pantry and freezers this past week. We also have already order 80# of chicken, which will be picked up the first week of November. Honestly at this point I don’t even have room to place this chicken anywhere. I am also considering placing a ground beef order for December but this will depend heavily and freezer space as well.

Now on to the planning

Lunch- .The kids were all excited that we bought “uncrustables” this week at Costco, along with grab lunches. I am going to be taking left-overs every day.

Dinner- During the week, things are fairly busy with an activity every night but Friday but we are keeping with the plan!

Saturday- Lunch: BBQ chicken plates              Dinner- Oyster stew or leftovers.

Sunday- Lunch- Baked potatoes, cream corn, Paula Deen mac and cheese.    Dinner-Leftovers or cowboy beans depending on how full the fridge is.

Monday- Salisbury steak, rice, green beans and fruit.
Tuesday- Pizza bites or eating at school even.
Wednesday-Spaghetti and meatballs
Thursday-  Chicken fried rice
Friday- Chicken nuggets and French fries.

 

I am attending a ladies conference next Friday night and Saturday so Matt and the kids will be figuring something out for these days.

1. Just because I like to be a rule breaker, I am going to post my saving on Saturday, in today’s list!  Amazon was running an awesome deal on Amazon Prime- $67 for a year’s membership. Matt helped us to join today. This will save us $4 a month starting in January because of the kid’s Kindle subscription. So we are going to enjoy free shipping, movies, music and books for $31 or $2.58 a month.

2. Our Menu plan this week was side track by a couple of things. First, a person at church is growing some awesome peppers and was generous enough to share these. We ended up having Pepper Steak on Sunday afternoon and Chicken Fajitas on Thursday. The second change was due to me locating a container of grilled chicken on Wednesday. Because I did not want for this to get wasted we had chicken fajitas on Thursday instead of shrimp and a awesome chicken pot pie on Friday.

3. This coming week will be the most challenging for our budget. So far for the month of October we are less than $10 over gas and groceries(which I cut to $300).  We already have a menu plan in place so my goal is to stay the course and celebrate an awesome successful month!

4.I have absolutely no plans for tomorrow. My goal is to not leave the house all day!

5.The kids had an early release day today and were picked up from school at 12 noon. I am very proud to say that so far this year, no one has missed a day of school or received a tardy. FIRST TIME EVER!

 

Menu Planning Monday

This week is back to the normal busy routine. The weather is turning cooler so I am starting adding a soup day to most weeks. The challenge for the next two weeks is to use the groceries we have on hand and make a good list of items needed  on the first of October. I currently sit at $306 spent on groceries and that included buying a gallon of milk for this week.

Now on to the menu plan

Breakfast– French toast, toast with new jelly, yogurt,  cereal, poptarts, grits or donuts at least for Monday and Tuesday. . Zach has been grabbing applesauce or canned fruit for breakfast as well.  Sunday morning- Breakfast Omelet

Lunch- For some odd reason, we have one Lunchable left in the fridge but no one wanted it this week. Lunches were all planned and mostly packed on Sunday. Our lunches include homemade chicken dunks, tomato, ranch and cheese, sandwiches one day, and a “grab day” which means crackers for most. I am going to take leftovers and Matt is eating these as well.

Dinner–Things are going really well with me arriving at home  for dinner most nights of the week.

Saturday- Lunch: McDonalds (profits from yard sale) .   Dinner- Hamburger Helper (we had the meat left from Thursday, we ended up eating our leftovers from Olive Garden).

Sunday- Lunch- My parents   Dinner-Pepper Steak using fresh peppers!

Monday- Rice Creola
Tuesday- Tomato Soup and Tomato/Basil Drop Biscuits
Wednesday-Salisbury steak, rice, green beans and fruit.
Thursday-  Coconut Shrimp
Friday- Chicken Broccoli Casserole

It just occurred to me that we are have rice three times this week. Matt loves it so I don’t think he will mind.

Monday Menu Plan

We are half way through the month and actually on budget in all areas, as you read yesterday!  This is really the most challenging part of the month for me. We are out of a couple of breakfast foods that are a frequent easy fix and with money left in the budget, I want to just go pick up. But instead we are going to try and use what we have and make sure we stay in budget.  I was out of town last Friday and most of the day Saturday, so things were a little bit different. This week it is back to the usually with an activity every night of the week except Tuesday and our yard sale next Saturday.

Breakfast– French toast, toast with new jelly, yogurt,  cereal, poptarts or grits. Zach has been grabbing applesauce or canned fruit for breakfast as well. Keeping it simple this week!  , Sunday morning- Sausage crescent rolls

Lunch- We are down to our last 3 days of Lunchable this week. Kendall was excited to be able to take chicken nugget two days, Zach decided on a sandwich one day and chicken nuggets one day and Lily has a grab lunch (crackers, fruit, gummies and cheese) with a sandwich the second day.

Dinner– I am trying to stick to my goal of leaving work by 5:30 daily so I can eat with the family most nights.

Saturday- Lunch: leftovers .   Dinner- Pizza Bread-Pop Up

Sunday- Lunch- Taco Soup .  Dinner-Leftovers .

Monday- Grilled Chicken salad (Leftovers make awesome wraps for me for lunch) Pasta Salad
Tuesday- Breakfast- Bacon, Eggs and Biscuits
Wednesday-Pork Chops, stove top stuffing and fruit
Thursday-  Crockpot Beef Roast
Friday- Hamburger Helper.

Wednesday-Chicken nuggets, FF and fruit
Thursday-  ?? Sheila decides or leftovers

Menu Planning Monday

Menu planning is usually not all that difficulty at my house. The main reason for this is that we are always trying to make and package items that make life simpler and easier to survive. For example, when we buy hamburger, part of it is cooked and frozen in 1 pound containers, these can be used for spaghetti, chill or even hamburger helper. This past weekend, I have been focusing on cooking ahead. Breakfast items have been made and place in the fridge for easy quick mornings. I made “Breakfast Burrito filling” on Saturday morning and a large container of baked oatmeal on Sunday. We cooked up several bags of dried beans because they are so much healthier and cheaper than canned beans. On Sunday, we picked 2 gallons of ripe muscadines.  I made a batch of jelly, frozen 8 cups of whole muscadine and made a second “starter” for more jelly. Sometimes by spreading the extra work out it makes it easier and we definitely eat better and spend less.

Now on to the menu plan

Breakfast-Breakfast burritos, baked oatmeal, French toast, toast with new jelly, cereal, poptarts or grits.

Lunch- The kids will be taking Lunchables everyday, I will take leftovers Monday, Wednesday and Friday with a sandwich on Tuesday. Matt will be eating from the fridge or sandwich every day.

Dinner– I am trying to stick to my goal of leaving work by 5:30 daily so I can eat with the family most nights.

Saturday- Lunch: Coconut shrimp and grilled pineapple.   Dinner- Chicken Enchiladas

Sunday- Lunch- with my parents.  Dinner-out of the fridge.

Monday- Spaghetti with meatballs and garlic bread.
Tuesday- Grilled Chicken salad
Wednesday-Pulled pork, green beans and fruit
Thursday-  Sonic corn dogs ($0.50 each)
Friday- Cowboy beans and cucumber relish from the freezer.

Saving on Saturday- Vacation

I really do enjoy travelling and especially enjoyed our vacation this year if you could not tell by all the pictures. One reason, that I was able to enjoy our vacation this year is because of the fact that we actually spent overall less on a week at the beach than we have spent on a long weekend trip. So today, I am going to share some tips that I used this year to not only save money but also to make this trip so enjoyable.

The first and most important tip is PLAN AHEAD!.  I booked our condo in January this year in order to get the specific week that I wanted for the rate we could easily afford. But I actually started buying for the trip back in November 2014. CVS usually runs some awesome Black Friday sales, starting the Sunday before Thanksgiving, for the past several years these have included laundry detergent for free after ECB.  I am pretty brand loyal, but in this case, I carried the free laundry detergent home and placed in a plastic container. During our beach trip, we typically come in from the beach and toss all suits and towels in the wash. My thoughts are free is good enough as long as it helps to remove the sand. Other items that I find on good deals (usually $0.75 or less) include hand soap, toilet paper, dishwasher tablet and dishwashing liquid.

The next way that I plan ahead for our vacation is meal planning. I know there are a few meals that the entire family loves and so if I am making one of these I will just make two and place the second in the deep freezer to take to the beach. Our plan ahead meals this year included baked ziti, chicken and broccoli casserole and gravy biscuits. If I find a good deal on a special snack food that we like I will also go ahead and purchase that as well. This year these items included goldfish crackers, Oreos and  Kit Kat Minis.  I also do the same with paper plates, cups and silverware. The condo does have a dishwasher but I prefer the paper for the convenience.

Another way that we save money is by saving and reusing certain items year after year.  I have a 20 year collection of sand toys that I store in a large bag in our building. Each year we take it with us to the beach. Some years we come back with less sand toys as if they break they are thrown away at the beach. We also have purchased a beach cart, umbrella and several chairs that are specifically for beach use. It may seem like a lot of trouble to carry these items back and forth but in the big picture it continues to save us money as we don’t purchase new items unless they are needed.

A finally way that we save money on vacation is by increasing the temperature of our house to 82* and turning off/unplugging anything possible. Our electric bill dropped by $30 this month in comparison to last month with the only difference being our vacation week. We also saw a $5 decrease in our water bill which is a direct result of less laundry.
