Monday Menu Plan

One week to SUMMER!   This should be the ending to a crazy busy school year and the start of a moderately crazy busy summer!  This week, I am definitely in survival mode. I did have time on Saturday to put together a couple of pasta dishes for dinner.  Tonight I managed to make a couple of salads for my lunches for the next couple of days.  To be honest this might be the last Monday Menu plan for the summer. As I am going to try and use what we have and what I am in the mood for that day! It may change to a what we ate last week post as well.

Breakfast- Saturday- Biscuit King    Sunday-  Bacon and biscuits Monday- Tuesday- , Wednesday, Thursday and Friday- eggs, sausage, bagels, bacon, grits, breakfast burritos or waffles are the current choices available.

Lunch- Saturday-Left-overs   Sunday- Don Juans  I have two salads the kids will eat out one day and figure out something the rest of the time.

Dinner- Saturday- Baked Chicken Alfredo   Sunday- Arby’s   Monday- Pumpkin Pasta   Tuesday sloppy joes   Wednesday- Taco pasta . Thursday- ???? who knows   Friday-Rehearsal dinner

Menu Plan Monday

This is a different week as the kids have started Summer break but I am still working. A plan for a couple more weeks and then it will be a free for all.

Breakfast- Saturday- Bacon and Eggs Sunday- Find it yourself, Monday- French Toast, Tuesday- banana chocolate chip muffins, Wednesday, Thursday and Friday- eggs, sausage, bagels, bacon, grits, breakfast burritos or waffles are the current choices available.

Lunch- Saturday-Steaks and salad   Sunday- Greggs. Monday- Pasta salad.  I will be taking salads and leftovers. The kids will eat out at least one day and then find things at home.

Dinner- Saturday- Left-overs   Sunday- Brats and sauteed zucchini   Monday- Left-overs  Tuesday Steak fried rice   Wednesday- Walking  Tacos. Thursday- Sloppy Joes  Friday-new recipe for alfredo chicken bake.

Menu Plan Monday

We are heading into the final stretch of school, I can feel summer break already!  Actually I have about 15 days left but this week is our final baseball game, Kendall and Zach finish school on Friday! The weather has also turned summery.  I  just do not want to cook and eat when it is so hot outside. This week you will notice lots of summer foods and minimal effort being placed. We have been steadily working through the left-overs and this weekend I discovered we would not have enough to use for lunches. Lily has begun working at the pool so that adds another meal that needs to be fairly easily to transport.  I decided to make up a couple of pasta salads.  We ended up eating these for lunch on Saturday and dinner on Sunday. They should also last at least 2 days for me!

Breakfast- Saturday-Biscuit King  Sunday- Find it yourself, I made a fried egg to go over my grits.  Monday, Tuesday, Wednesday, Thursday and Friday- eggs, sausage, bagels, bacon, grits, breakfast burritos or waffles are the current choices available.  I will likely make a final loaf of zucchini bread to use one morning. This will also clear out the frozen zucchini in the building.

Lunch- Saturday-Pasta salad  Sunday- Arby’s. Pasta salads will be the best choice this week. I may also make a couple of grilled chicken wraps. This is the last week of preparing lunches for the kids so the amount of convenience foods we need will significantly decrease. They will be able to make their own lunch at home for the next couple of weeks until I finish with school.

Dinner- Saturday-  Dinner at Izzy’s Graduation party Sunday- Pasta Salad.   Monday- Salad with choice of grilled chicken or pulled pork (both meats are leftovers)  Tuesday-McDonalds for the kids, Matt and I will have a date night. My choice will be sushi. Wednesday- Chicken Tacos. Thursday- Fish sticks  Friday- Homemade pizza!

 

3 Mondays of school left and next week is Memorial Day!  The final Monday is a workday and Kendall leaves for camp.

Monday Menu

Week two of our busy schedule is here. I also did find out that we will be adding swim team practice and Lily’s job into the mix starting next week.  The good news is that we will be down to 1 ballgame a week and one band concert so things should start to settle out.  In preparation for this busy week, I spent some time in the kitchen on Saturday night. The great news is until Friday all the meals are basically heat and eat thanks to the preparation on Saturday!   The next big food related goal is to organize the freezers……. maybe I can start this weekend if not only 5 weeks till summer!

Breakfast- Saturday- Breakfast bowls with hashbrowns and gravy! Sunday- Cracker Barrel , Monday, Tuesday, Wednesday, Thursday and Friday- eggs, sausage, bagels, bacon, grits, or waffles, breakfast burritos are the current choices available.

Lunch- Saturday- Left-overs from the fridge .. Sunday- Pretzel at outlets for everyone but me. I did not make my lunches ahead this week so lots of left-overs and sandwiches will work.

Dinner- Saturday-  Cowboy beans and cornbread Sunday- Dinner with the family at Haley’s .  Monday-Spaghetti and meatballs (last of the spaghetti sauce I think). Tuesday- Chicken enchiladas. Wednesday- Stuffed green peppers Thursday- Frozen pizza or left-overs . Friday- Steak, mashed potatoes from freezer and salad.

Monday Menu Post

This is one of the busiest weeks of the school year with next week even more so.  We are going to focus on eating at home as much as possible but realize that always will not be the case. I am very thankful for the convenience meals already in the freezer and the goal is to have the freezer emptied by the first week of June. However, I did add 6 HUGE frozen pizza, 3 boxes of frozen waffles and a loaf of french bread to the freezer on Saturday.

Breakfast- Saturday- find it yourself, I had a bowl of grits with left-over sausage. Sunday- Pretzel Bagels, Monday, Tuesday, Wednesday, Thursday and Friday- eggs, sausage, bagels, bacon, grits, or waffles are the current choices available.

Lunch- Saturday- Everyone but me ate on the boat. I had McDonalds with mom. Sunday- Panda Panda.  I have 2 salads, 1 veggie plate and plan on left-over chinese one day.

Dinner- Saturday- I had left-overs, everyone else had Dario’s after leaving the lake. Sunday- Italian sausage with peppers, onions and potatoes.  Monday- 2 of the pizzas I purchased on Saturday. Tuesday- Taco Tuesday with hard shells, Wednesday- Ballgame food (Zach has a 6pm balgame and I have a doctor’s appointment). Thursday- Chicken legs from the crockpot with a couple of veggie sides. Friday- Broiled fish and zucchini rice.

 

5 Mondays of school left and one of those is a holiday!

Tuesday Thoughts

  1. I was unable to find strawberry plants on Saturday in town but did find that Stark Brothers has an awesome sale currently. I am likely going to go ahead and order 25 and plant most in the vertical planter and the remaining ones can be planted in containers. As Matt said then if they all live you can transplant next year!
  2. SInce I am ordering the strawberry plants,, I am also debating trying to grow raspberries in the very shady part of my yard. I seriously have a hard time finding information about growing raspberries but I do know that my kids absolutely love them!
  1. Matt and the kids are planning on joining Haley and David for a day on the lake on Saturday. I am excited because this will leave me with lots of time to work on budgeting and bills as well as heading to the grocery store with Mom without pressure to hurry.
  2. We are attempting to leave our air conditioner off as long as possible! I was disappointed that after returning from Disney we had to run the heat for 3 days. So now the goal is to see how long we can go without using the air. With everyone out during the day and baseball games at least 2 nights a week. We should be able to last until May 15th. This would be an excellent way to save on our electric bill as that is the end of the billing cycle!.
  3. I did not share but on Thursday we made an impromptu trip to Costco which blew our grocery budget out of the water! Ugghhhh

Monday Menu Post

7 weeks to finish cleaning out the freezer!   I was so excited last week to actually be able to see the bottom of the chest freezer.  I am very hopeful that we will be able to empty within a month just to make things easier for us. I will also begin the hunt to purchase a cow once the freezer is completely empty.  This week we are adjusting to a new routine with Matt’s new work schedule. We likely will move dinner to around 6 pm most days. I also am still working both my jobs so meal need to be fairly simple. The good news is that I spent some time on Sunday preparing for the week so I really feel like we are in a good place. You will notice that we have several meal out this week. Which will likely become the norm with the games and schedules of the next few weeks.

Breakfast-  Saturday- Sausage biscuits. Sunday- bacon and eggs. Monday- zucchini bread  Tuesday- left-over muffins from Monday nights desert and the remaining zucchini bread.   Wednesday- baked oatmeal, Thursday, Friday- choice of eggs, sausage, french toast or pancakes, cereal or grits.

Lunch-  Saturday-Chicken tostitos from the freezer , Sunday- KFC  Matt has 1 salad, 2 hamburgers and left-over pizza and chicken  The kids have left-over pizza, and chicken, sandwich and mac and cheese one day.. I have a salad, pizza, veggie tray and left-overs.  Did you notice that we manage to stretch our meals out to include several lunches!

Dinner-  Saturday-Pizza Sunday- left-overs of choice Monday- steak, mashed potatoes and salad  Tuesday- Spinach ravioli   Wednesday- Crockpot lasagna  Thursday- chicken tacos  . Friday- pork chops and mac and cheese.

Monday Menu Planning

Being sick is no fun!! The last week has been a long long difficult season.  Besides the physical aches and pains, trying to keep everything going was just mentally exhausting as well. Luckily, I had already put a meal plan in place before I got sick last Tuesday, I had not shared here but it was on the whiteboard.  All the meals were able to me made with modifications needed only for the weekend.  One of the accomplishments for the week is that we made a couple of extra servings that can be used for lunch this week which made several kids very happy. I did end up tossing a couple of items that had gone bad but so is life.

Breakfast– Saturday-   Homemade Bagels with bacon, pimento cheese or tomatoes. Sunday-Cinnamon waffles    Tuesday- zucchini bread, Monday-, Wednesday, Thursday, Friday -choice of breakfast muffins, eggs, sausage, oatmeal, cereal, pancakes, French toast or grits or breakfast burritos.  We do have some left-over baked oatmeal from last week which needs to get eaten
Lunch- – Saturday-leftovers      Sunday – Mexican rice   Monday- Thursday we are taking zucchini rice and Mexican rice for meals along with the usual left-overs.
Dinner- – Saturday- Egg salad and bacon sandwiches     Sunday-   Chicken soup from freezer (I threw in the left-over turkey) Monday- Spaghetti and meatballs. I made an entire box of spaghetti noodles so the kids will use these for lunch as well.  Tuesday-Pork Chops, mac and cheese and green beans.  Wednesday- Left-over or find your own night Thursday- first ballgame of the year!  Friday-Steak, twice baked potatoes and salad.

Monday Menu Post

We have several “food accomplishments” to celebrate this week. First we are at 50% in the chest freezer. I am beginning to look at how we want to organize this for the future. I also have some tiny spaces in the freezers in the house. The next goal is to move all the connivence foods into the house where they can be convenient!  Next we have not eaten out this week, we will have guest this weekend for Lily’s play and I am going to assume that means we will be eating out several times.  Third, total grocery spending for the month is $20.   Thanks to a trip to Costco using our credit card rewards! Dinners are a little bit less work intense as we move into the busy season,.

Breakfast– Saturday-   Homemade Bagels with bacon, pimento cheese or tomatoes. Sunday-Muffins from Costco    Tuesday- muffins from Costo, Monday-, Wednesday, Thursday, Friday -choice of breakfast muffins, eggs, sausage, oatmeal, cereal, pancakes, French toast or grits or breakfast burritos.  We do have some left-over baked oatmeal from last week and with the muffins no need to make anything extra this week.
Lunch- – Saturday-Turkey Dorito Casserole     Sunday – Sausage potato soup Monday- Thursday I have 2 salads and one day of chicken salad and one left-over day.
Dinner- – Saturday- Turkey, stuffing, air fried corn and zucchini.    Sunday-  left-overs and we finished up the soup! Monday- Shrimp Alfredo  Tuesday-Taco Soup   Wednesday- Turkey noodle casserole  Thursday- Beef and Broccoli  Friday-Lasagna and Garlic bread.

 

Monday Menu Planning

This week we are adding in several after school activities which always adds to the craziness. Luckily, I knew this stage was coming so you will start to see lots more convivence items used!

Breakfast– Saturday- Full breakfast with eggs, sausage and bacon, cresant rolls and more!  Sunday-New breakfast casserole in the crockpot    Monday-Tuesday, Wednesday, Thursday, Friday -choice of breakfast muffins, eggs, sausage, oatmeal, cereal, pancakes, French toast or grits or breakfast burritos.  The goal for the week is to have baked oatmeal once and probably another zucchini bread as everyone likes it!
Lunch- – Saturday-Sandwiches    Sunday – Turkey, stuffing, scalloped potatoes, dressing, green beans, cranberry sauce  and squash casserole  Monday- Thursday left-overs are theme of the week.  I did make more egg salad for Zach!
Dinner- – Saturday- Coconut shrimp and fries   Sunday-  left-overs Monday-Hamburgers and  Tator tots  Tuesday-Mexican tostado   Wednesday- Quiche  Thursday- Pork Fried Rice Friday-leftovers or taco soup.
