Monday Menu Post

The word of the week is food waste. The goal is to eliminate as much food waste as possible, with the ultimate goal of $100 groceries this month while eating out of the freezers and panty. Spending for groceries so far this month is $18.33!

Breakfast– Saturday-Biscuit King   Sunday- Sausage links and toast Monday-Tuesday, Wednesday, Thursday, -choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.  Friday- Gregg’s
Lunch- – Saturday-left-overs Sunday- Cracker Barrell   Monday- Thursday Leftovers, pizza and soup should work for most of the week.
Dinner- – Saturday- Left-overs Sunday-Cowboy Beans (from the freezer) and cornbread.  Monday- Ham Tetrazzini- we used left over pork lion instead of ham. Tuesday-Hamburger Steak, air fryer corn and scalloped potatoes   Wednesday- Crockpot Chicken and Dumplings.  Thursday-Left-overs

I think we will succeed!

Monday Menu Planning

First official snow day of the school year. Technically it is a bad weather no power day but I am seeing snow flurries so decided to stay home and call it a snow day!

I started our limited grocery budget ($50 a week) last week and we nailed it!  We spent $4.00 from the change jar in total. We spent alot of time last week, eating left-overs so we are all caught up for the time being. We are starting to slow pull items out of the freezers and pantry so we are definitely back to meal planning this week!

Breakfast– Saturday-sausage links and eggs   Sunday-left over muffins from Costco  Monday-Gravy and biscuit (made because of my school delay/closure) Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.
Lunch- – Saturday-sliders with turkey and ham   Sunday- Panda Panda   Monday- left-overs  Tuesday- Friday Leftovers, pizza and soup should work for most of the week.
Dinner- – Saturday-Homemade pizza    Sunday- Dad’s Chicken stew (with a whole meal frozen for the future).  Monday- Tomato soup and grilled cheese sandwich. (Matt spent fifty cent to purchase bread for this.)      Tuesday-Hamburger Helper   Wednesday- Mackerl and corn and fruit.  Thursday-Spaghetti and meatballs    Friday-Leftovers or Breakfast casserole depending on how the week goes.

Let’s Talk Food!

Food is always a huge part of any celebration for us!  This year did not disappoint!  We started on Wednesday morning with a trip to Cracker Barrel for breakfast!  Lunch/ Dinner was a really cool burger bar in Asheville called Juicy Lucy!

We enjoyed microwave breakfast meals in our camper both Thursday and Friday mornings!  These are a huge treat for us and at $27 for both mornings way cheaper than eating out! On Thursday, we enjoyed lunch at the Stable Cafe at Biltmore.

Christmas Eve, Friday, was our usual Pork BBQ with the addition of baked beans and mac and cheese!  This is definitely a repeat.

For Christmas morning/ lunch I made cheddar bay sausage balls, cream cheese cresant rolls and a hashbrown casserole.   For dinner we simply ate from the fridge with the healthy addition of deviled eggs, fruit and a veggie tray.

Sunday or the day after Christmas continued our food celebration, my Sunday school class had a pot luck breakfast, lunch was at La Caretta (Mexican) and dinner is appetizers at a gathering of friends.

After all this, I am sure a food coma is going to occur soon!

I have also had a chance to view out grocery spending for the year. I am very excited to announce that we spent $6,312.75 on groceries this year which is an average of $526.06 a month!!! This is actually a decrease in the overall average from last year.  I have been doing some thinking and planning.  I want to challenge myself to keep grocery spending to $50 a week for the months of January, February, March and May. We are travelling to Disney in April so I am not sure if that is realistic to even attempt to keep this same budget in April.  This will allow us to hopefully use up the majority of the food that is in our freezers so I can spend some time next summer, restocking with items that we currently are enjoying and make a bunch of prepared meals.  It will also allow me to get a realistic idea of what we need to spend on a weekly basis for fresh food and diary items.

Menu Planning Monday

The last full week before Christmas break. I feel like my life is stuck in a holding pattern. I can’t make any plans or decisions regarding our new budget or finances until at least the end of the week. The good news is that Matt has a second interview on Friday, this may lead to his new job or this may be another dead end.  We also should have a better idea of what to expect financially after a meeting on Wednesday.  For now, I am just trying not to worry and spend!  We ended up eating out alot this weekend but hopefully we can get back on track quickly and easily now!

Breakfast– Saturday-Wendy’s breakfast biscuits. Sunday-Breakfast bowls- leftovers were made into burritos and froze for future use.   Monday- In an effort to use up items I made fried bologna for everyone this morning! Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.
Lunch- – Saturday-Pork Nachos with Velvetta cheese   Sunday- Gregg’s   Monday thur Friday Leftovers, pizza and soup should work for most of the week.
Dinner- – Saturday- McDonalds prior to Tanglewood lights.    Sunday- Pasta Fagali Soup (with a whole meal frozen for the future.  Monday- Chicken taco casserole    Tuesday-Stuffed shells    Wednesday-Pork Fried rice (any remaining pork will be made into future pork fried rice meals.)  Thursday-Steak and pasta salad     Friday-Pork chops and Mac and cheese.

I did go to the grocery store with my mother on Saturday but managed to spend less than $5. This week we will be focusing on using the food we have on hand!

Breakfast– Saturday-Find your own.  Sunday-yogurt for me   Monday, Tuesday, figure it out!  Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.
Lunch- – Saturday-Pulled pork for Lily Birthday   Sunday- Olive Garden  Left-overs, pizza and soup should work for most of the week.
Dinner- – Saturday-Left-overs   Sunday- Left-overs. Monday-  Left-overs   Tuesday-Turkey Casserole   Wednesday-Baked Potato Soup  Thursday-Hamburger Helper     Friday-Pork Quesadas or you guess it Left-overs!

Monday Menu Post

The next few weeks are filled with lots of late meeting for me.  In addition to the time change, I am not a happy camper. Thankfully, both Lily and Matt have stepped up to help with dinners. Menu planning save time, money and my sanity on weeks like this. We are very fortunate to have a completely stocked pantry and freezers. I have been working on using what we have since July and it appears to be working.   This week everyone is home on Thursday so things may appear a little different.

Breakfast– Saturday-Find your own and use eggs. Sunday- muffins from Costco  Monday- more muffins from Costco and I have a breakfast burrito , Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets. We are making good use of our eggs and home to continue to receive some each month.

Lunch-  Saturday–Costco for Matt and I  Sunday-Gregg’s. The kids have started packing lunch with things they find. I will continue to take several days of left-overs as long as they are available.

Dinner-  Saturday-Chicken from Costco, stuffing and peas.    Sunday-Snacks and crackers. Monday- Paula Deen chicken casserole (new)   Tuesday- Lasagna from Costco with garlic bread.  Wednesday- steak and twice baked potatoes Thursday-Breakfast casserole     Friday-Beef and Broccoli in the insta pot.

Monday Menu Post

Menu planning has been a life saver the past couple of hectic weeks. I have enjoyed pulling items from the freezer to bake and eat.  We are really starting to enjoy the benefits of the hard work this summer. I also am supper thankful to have a full freezer as we are starting to see shortage on some items especially food in our area. I am only purchasing diary and fresh fruits. My sister in law gifted us about 4 dozen eggs on Sunday, and has promised as many as we can eat for the near future. Eggs are going to appear alot.

Breakfast– Saturday-Eggs, grits, bacon and biscuits. Sunday- nutella baked oatmeal      Monday- , Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets. I am working on eating at least one egg every day for the protein.

Lunch-  Saturday–Left-overs Sunday- Corn dogs from Sonic. We are all eating left-overs from the fridge for lunch this week. Zach is eating at school most of the time.

Dinner-  Saturday-Coaches .    Sunday-Potato and Kiebsa  Soup Monday- baked spaghetti  Tuesday- Salisbury steak, rice, green beans and rolls .  Wednesday- Cheese burger pizza Thursday- left-overs or make your own     Friday-Chicken fried rice.

Menu planning has been a life saver the past couple of hectic weeks. I have enjoyed pulling items from the freezer to bake and eat.  This week we have added soup back to the menu. I enjoy the variety it brings!

Breakfast– Saturday-Breakfast bowls. Sunday- Danish from Costco    Monday, Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.  My goal is to add a day of baked oatmeal back in but we shall see.

Lunch-  Saturday–Left-overs Sunday- Gregg’s .  Matt made chill to take this week. I am planning to take a couple of days of soup and hopefully some left-overs.

Dinner-  Saturday-Broccoli and cheese soup from Costco .    Sunday-Taco Soup Monday- Chill    Tuesday- Grilled Chicken and pasta salad .  Wednesday- Walking Tacos in a bowl Thursday- Pulled pork and corn on the cob    Friday-Left-overs or egg drop soup if I get adventurous.

$5 Meals

I have added a new category $5 meals.  I want to first explain my rationale for adding this so late in the game. I enjoy reading lots of blogs. It often helps me with saving money and it also gives me so great ideas.  One of the consistent themes that I have been reading for several month is that the cost of food is rising.  I have read on some sites that the expectations is that all food prices would increase by 10% plus percent by the end of the year.    I am definitely starting to see this in my area. For example, a 10 pack of water flavors has been priced at $1.00 for at least 2 years.  This is my buy price and I can always find at Walmart.  Yesterday, the price had increased to $1.23 for the box.  Fortunately, I have worked really hard to stock both the freezer and pantries with enough supplies to last at least until December if not longer.   I decided that I also wanted to start a list of these $5 meals so that in the future, I can come back and rotate through them again!

Spaghetti sauce- this is definitely a family favorite. In fact, most everyone prefers this over jarred sauce.  I did not know if we would have enough tomatoes to restock this summer but it appears we do. I did not try and make any salsa or diced tomatoes but hopefully in the future we will be able to stock both the spaghettis sauce and other items.    The tomatoes are from the garden, I purchased around 40 plants for $36 this spring so I am averaging $1 per crockpot as my cost.  $1 green pepper, $0.50 onion (from freezer), basil and oregano were from the freezer from past years.  Garlic =$0.50 and 1 tablespoon of sugar.  $3 for the sauce and $1.00 for the pasta makes a hearty meal for all  of us less than $5.

Pasta Salad for lunch-  We all are taking lunch most days. The kids really don’t like sandwiches and I try to avoid bread whenever convent so that leaves a lot of decisions and lunch making.  We have found an easy solution- dressing up pasta salad.

I always purchase when I find for $1 a box.  We actually used 2 boxes to make 7 lunches.  I added Deli Ham that was purchased on clearance for $1.84, a half a block of colby jack cheese, purchased for something else, 2 boiled eggs, (ten cent each) and of course tomatoes from the garden.   Less than $5 for lunch for everyone that is filling and good!

Monday Menu Planning

Things feel as back to normal as I can ever remember. We are still wearing mask to school but most activities have resumed. Mask are not required for shopping in Lexington yet. So I am very thankful to stick close to home these days. Our pantry and freezers are full so the goal is to work through these meals for the next 9 months.  I plan to keep shopping to a minimum at least until December. Grocery goal is going to become $300 for September to December.  We are back to eating at home for all meals this week. I do know that once baseball games start we will eat out at least one night a week if not 2 depending on the timing of games.

Breakfast– Saturday-Sausage biscuit made by Zach. Sunday- Fried bologna and eggs or bagels.    Monday- BLTs9 using tomatoes from the garden).   Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.

Lunch-  Saturday–Left-overs Sunday- Time Square Pizza.  Matt has chill from last week. I am going to make 2 salads and take pasta salad for lunch. The kids are taking what they consider half a lunch most days.

Dinner-  Saturday-Local steakhouse (treat for a long hard day of work).    Sunday-Left-overs  Monday- Brats, pasta salad and corn on the cob.   Tuesday- Hamburger helper (2 boxes plus one pound of ground beef) .  Wednesday-Broiled Fish with veggies and pineapple cole slaw. Thursday-Chicken and dumplings in the crockpot    Friday-Sloppy joes and fries
