Menu Planning Monday

For some strange reason, my brain was saying that because the kids were out of school a couple of days this week, things should be less hectic. Of course, my brain was wrong. In fact, we have multiple things going on every night this week. The positive- no extra eating out this week. Pizza is free with gift card.

Breakfast- Saturday- fried steak biscuits. Sunday,-bacon and eggs Monday- Peanut butter and chocolate baked oatmeal,Tuesday,Wednesday, Thursday, Friday– Choice of fried bologna, omelet, pop tarts, cereal, bagels or toast. 

Lunch–Saturday- chicken stew , Sunday-Gregg’s(local restaurant). Friday both Matt and I will eat out, Monday-kids had mac and cheese, Tuesday- chicken salad plate for me. Wednesday-ramen noodles, Thursday- something left-over. Matt has four salads this week. Kids have grab and go and sandwich on the days they go to school.

Dinner – Saturday- left-overs.  Sunday–Broccoli-cheese casserole Monday-Burrito Soup Tuesday– Sweet meatballs Wednesday-Pizza Thursday– Ham Bone soup Friday- Hamburger Helper.

Saturday Activities

Today has been a really awesome day, the reason why because I am still in my pajamas and have no plan to leave the house all day! Lily and Kendall are on a youth retreat. Zach is at a birthday party for a friend. Another parent offered to pick him up and drop him off so of course I could not refuse.

I have managed to wash both the sheets on our bed and Zach’s bed. I was not able to hang out to dry but instead ran the dryer during the day to add some heat in the house. The weather is cold with a high of 40* another good reason for me to stay inside.

I made a stop by the grocery store last night. I found whole chicken on sale for $0.99 a pound which is a good price for my area. I prefer to get the already roasted chicken at Costco but we don’t have a trip planned to Costco in the near future. So this morning, I placed the chicken in the instapot. When it finished cooking, I removed the meat and shredded it. I made a huge batch of chicken stew. I have already froze one meal. It will probably work for at least one other full meal. The second half of the chicken, I am going to use in a new recipe this week called Burrito Bowl Soup. Look for a post about it on Monday hopefully.

This coming week is a lot different as everyone is out of school on Monday. Kendall and Zach only go to school on Thursday and Friday. I went ahead and put up the schedule for the week along with meals. I actually went ahead and prepared everything thing I could so that it will be a heat and eat week.


Menu Planning Monday

Things are starting to get a little bit hectic around here, cheerleading started last week, Zach has both sign language club and student council meeting, Lily will start rehearsal for her spring play next week. We also are trying to fit in some doctor appointments. Matt is no longer working a second job but I have working at least Sunday and Wednesday night.

Breakfast- Pimento Cheese and Bacon biscuits. Sunday,-Lucky Charms cereal. Monday,Tuesday,Wednesday, Thursday, Friday– Choice of breakfast burrito, omelet, pop tarts, cereal, bagels or toast.  I may make a baked oatmeal for one morning just not sure yet. (Did not happen last week so it may this week.)

Lunch–Saturday- out to eat at The Classic in Denton, , Sunday-Panda Panda Chinese. Friday both Matt and I will eat out, Kids have a mix of salads, soups and sandwiches. Matt and I both has two days of salads, He will have homemade chill the other days and I have a snack tray planned and a left-over soup.

Dinner – Saturday- Salads and crackers.  Sunday–Left-overs Monday-Tator Tot Taco(new recipe) Tuesday– Find your own Wednesday–Chicken Diva Thursday– Pork Chops, scallop potatoes and green beans, Friday- probably a meal out as the girls are going skiing with the youth group.

Monday Menu Planning

We are back to a regular routine this week. The kids all have school and I am working both jobs. You may notice that several easy to fix dinners are showing up. I am also committed to trying one new recipe a week. The biggest accomplishment of the week is no planned eating out!

Breakfast- Saturday ,Eggs, bacon and toast. Sunday,-Frozen Waffles. Monday,Tuesday,Wednesday, Thursday, Friday– Choice of breakfast burrito, omelet , pop tarts, cereal, bagels or toast.  I may make a baked oatmeal for one morning just not sure yet.

Lunch–Saturday-Sandwiches on Hawaiian rolls, , Sunday-Cranberry Chicken Friday both Matt and I will eat out, Kids have a mix of salads, soups and sandwiches. Matt and I both has two days of salads, He will have homemade chill the other days and I will find the best left-overs.

Dinner – Saturday- twice baked potatoes (from freezer).  Sunday–Broccoli and cheese soup Monday-Sloppy joes and French fries Tuesday– Taco pasta Wednesday–crockpot cubed steak. Thursday– Chicken enchiladas, Friday- Kielbasa and rice.

Creative Left-overs

I cooked a huge meal for Christmas lunch, knowing that I would be able to stretch it for several more days. The day after Christmas we shared left-overs with our friends and ended up with about 1/4 of a spiral ham and even more unexpected was the left-over BBQ pork from my family gathering. So far, I would consider our use of left overs a success! We been eating up the left-overs for 7 days now but I have been able to use things in different ways and actually freeze several easy to prepare meals to use in the next couple of months.

The first creative left-over was ham bone soup. I cut most of the remaining ham off the bone and threw the bone in crockpot with an additional 2 cups of chopped ham, added a bag of navy beans, chopped up cooked carrots, a couple of stalks of celery that were not used, 1/4 teaspoon of red pepper flakes, 1 teaspoon of pepper, 1 teaspoon of salt and 6 cups of turkey stock. We ate this for a dinner meal and I froze a container to use as a quick soup meal.

I pulled out my food processor to make ham salad. This is an awesome snack or lunch.

Yesterday, I chopped up some of the ham and mixed with remaining mac and cheese. Kendall, who is not a left-over person loved this and requested that I make it again! Today at lunch, we finished up the ham by making ham and cheese quesadillas.

Left-over BBQ was eaten as several meals of sandwiches, next I made two containers of Pork Fried Rice. We ate one for dinner and finished as a lunch. The second container was frozen again for a easy meal in the future.

Turkey is an easy sandwich of course. But I have also made a pot of Turkey taco soup, simply chop up the cooked turkey instead of ground beef. This also made two meals with one in the freezer to use later on.

Monday Menu Plan

This plan looks a lot different, simply because it is for the week of Christmas. In my make believe world, I would get to enjoy several day of not cooking, however Christmas day or not my kids want to eat. They also want something beside left-overs after a full day of them. I am trying a couple of new things this year to see how they work out, the goal is to make things easier for me and keep everyone happy and feed without a lot of stress.

A couple of things to look for and I will definitely let you know if they work. 1.You will notice that each morning we have a casserole or other make ahead item. We are big breakfast eaters but I am not a big morning person. I am trying several new recipes and hope to make some a part of the normal routine.
2. I don’t want to spend a lot of time on Christmas Eve or Christmas Day cooking. My goal is to have everything prepped ahead of time so that I can dump and pour and/or stick in the oven for a good but easy meal.
3. The kids and I are home all week long. Matt has a couple of days off so lunch becomes a regular meal.

Saturday- Desert day. Most of the deserts for Christmas are made. I do have a couple of place and bake cookies to be made Christmas Eve. Peanut butter balls, Reindeer crack and brownies are all made! Breakfast-Bacon and egg biscuit casserole. Lunch- Olive Garden Left-overs. Dinner- Girls at Youth Christmas party. East Coast Wings for Matt, Zach and I.

Sunday- Breakfast-Toast and Church breakfast. Lunch- Gregg’s(local restaurant). Dinner- Left-overs.

Monday- Preparation Day This is the day that hopefully makes the rest of the week go smoothly. We will prep 2 days of breakfast and all the items need for Christmas lunch. Breakfast-Bacon and sausage casserole. Lunch- Oyster Stew for home, Matt has banana bread and a snack meal at work. Dinner-Pick a left-over or sandwich.

Tuesday- Christmas Eve! Breakfast-Cinnamon Roll Baked Oatmeal. Lunch- Left-over Soup day or Tomato Soup. Dinner-BBQ at my mother’s house.

Wednesday- Christmas Day-Breakfast-Sausage Cresant Casserole and Hashbrown Casserole.  Lunch- Turkey, Dressing, 7 layer salad, Cranberry sauce, Creamed corn, Carrots, Squash Casserole, Green Bean Casserole and Cresant rolls Dinner-BBQ at my mother’s house.

Thursday- Leftover Day! Don’t think this needs any explanation but it is grab and eat. No fighting and no saving!

Friday- Breakfast-Sausage and Egg Casserole. Lunch-Nachos(depending on what is left it may be turkey nachos or it may be beef nachos. Dinner- Taco Turkey Soup. This was a huge hit last time so I hope it is as well received this time!

Menu Planning Monday

We should be able to finish up most of our left-overs this week. I am hoping to get everything cleaned out before we start with Christmas foods.  Last Thursday, was a busy and tiring day, I decided to treat everyone and we ate at Cracker Barrel.  I did cook the meatloaf muffins on Saturday, so nothing went to waste.  I have a busy week so we have simple foods on the menu. Our Christmas celebration with friends is Thursday night so that make it appear that we are eating out a lot this week.

Breakfast- Saturday,-left-over breakfast from last week and Cracker Barrel.  Sunday,-Eggs cooked your way. Zach actually finished up the last of the breakfast leftovers.  Monday, Tuesday, Wednesday, Thursday, Friday– Choice of bagels, sausage, eggs omelet, oatmeal, pancakes, cereal, French toast or toast.  This is the easiest meal of the day!

Lunch–Saturday-left-overs. , Sunday- meal out with friends.  Friday both Matt and I will eat out. Salads are the choice of the week, along with soups and chicken nuggets for Kendall.

Dinner – Saturday- Meatloaf muffins, mashed potatoes and corn bread.  Sunday–Left-overs, Monday-Pepper Steak and egg rolls.  Tuesday– Spaghetti and meatball, using left-over sauce that is in the refrigerator. Wednesday–choice of Soups (we have three varieties in the refrigerator). Thursday– Chick Fil A . Friday- Dominos Pizza ( we will use gift cards so really does not count).

Menu Planning Monday

I was amazed to realize that I have not shared a menu plan since October 7th?? We have changed strategies a little this year, instead of a monthly menu plan we are doing a weekly plan. This added flexibility allows us to use up left-overs and arrange around special events. This weeks plan looks a little different as we are scheduled to go out to eat twice. Monday night is the annual Christmas parade uptown and Kendall is riding in it. Friday night is Lily’s birthday so she picked Chick A Filet for her meal. I have a school discount card that is buy one get one free for Arby’s roast beef and I have a $10 gift card to use on Friday. Between the two, I am budgeting $50 for both nights.

Dinner – Saturday- Potato soup.  Sunday–Left-overs or sandwhich Monday-Arby’s Tuesday– Chicken enchaladias, I plan to use the rest of the chicken from Costco Wednesday–orange chicken and egg rolls. Thursday– Meatloaf muffins, mashed potatoes and corn bread. Friday- Chick A Filet.

Saving on Sunday and More

Yes, that is me with my head bobbing above the water. October has definitely been a huge month of change for us. Matt started a new job which added an additional 20 hours to his work schedule in addition to a significant pay increase. I also have finally after 18 months added a second job. The hours will vary greatly for me but at this point I am guess an additional 5 -10 hours a month. This may increase in January but I am very grateful for the slow start as crazy needs to slow to a slightly less than crazy before any more significant changes. This week, we made a personal decision to add a car payment to our budget. This may or may not be a long term budget item but we are able to cover the payment amount in addition to slowly reduce our debit and get a good control over our finances. We have seen in many different ways that God’s hand and timing are perfect. We know beyond a shadow of a doubt that this is God’s will so we are going to praise him even when we are not sure the how or whys.

One thing that has not changed this month is that we are continuing to find ways to save money! I want to include a detailed list so that next year and 3 years and 10 years when I look back, I am able to see that all the little saving did add up.

  • Running the dishwasher and dryer at night. We are making a conscience effort to reduce our electricity use. By running this at night we add a little bit of heat to the house on the cool evenings and prevent heat from staying in the house on the not so cool evenings.
  • Not turning on the air conditioner. This sounds simple, especially in October, but the temperature today inside was 81*, We did turn off the heat on Wednesday of this week but I refused to flip the switch and turn back on the air. Instead we opened the windows and turned on a couple of ceiling fans. The weather is actually suppose to start to get cooler with a high on this Friday only in the 50’s.
  • Hanging sheets out to dry. Yes, it was not convenient and the weather said it was suppose to rain but I got up and got them on the line.
  • Shopping for items we need and on clearance. So far this month, I have spent $203 in groceries. Which including stocking up on soda and items for Braxton’s birthday party. I always check on clearance items and have been able to grab both hugs/kool aid drinks and Gatorades on sale for $0.25 each.
  • Combining sales and coupons. I scan my card each time I go in Food Lion. In the past, I have been able to grab pasta at fifty cent a box. Today, I got 24 waters for $0.99 and 3 packs of brown gravy mix for a total of $0.77 which is less than the price of two. Neither one of these items were needed but I will definitely use them both.
  • Meal prep. It is so much easier to prepare lunches ahead of time. Four out of the five of us need to pack a lunch each day before leaving the house by 7:20am. We save a minimum of $10 a day by packing lunches instead of buying. We are also able to stay on track by planning dinner meals a week ahead of time. This week, I even used the instapot to brown the ground beef ahead of time so that I can get dinner on the table even after attending a workshop all day.
  • Call and asking for help. We are continuing to struggle with stopping a leak in our master bath room. Matt has replaced the entire floor and subfloor and is trying to replace the shower faucet. Yesterday, he was able to contact a manufacturer and receive a replacement part he needed for free. He has been asking for advice and suggestion through out this process and we are saving money just by completing it ourselves.
  • Using items on hand instead of immediately purchasing a replacement. Braxton does not like and will not eat meat baby food but Rugar, our dog will. Instead of buying dog food we are using the baby food that would otherwise go in the trash.

Monday Menu Planning

This week appears to be one of the busiest on record. Matt starts his new job which will add an additional 20 hours of scheduled work each week. Each of the kids has multiple evening activities with all 5 evening having at least 2 separate activities and some with three and more. We are continuing to plan on Sunday afternoons which also includes a trip to the building to grab the needed supplies.

Breakfast- Saturday,-breakfast burritos. Sunday,-Left-overs for the girls. Boys had men’s breakfast.. Monday,Tuesday,Wednesday, Thursday, Friday– Choice of breakfast burrito, omelet oatmeal, grits, pop tarts cereal, French toast or toast.  This is the easiest meal of the day!

Lunch–Saturday-Food at Community day , Sunday-left-overs Zach is taking lunchables for 2 days, a sandwich and pasta salad. Kendall is doing a mix of dipping days, sushi, uncrustable and a sandwich. My plan is to take pasta salad, 2 days of salad one day of leftovers. Matt is starting to need lunches as well so he has a salad, pasta salad and wraps.

Dinner – Saturday- Breakfast for dinner including bacon and hashbrown casserole.  Sunday–Left-overs or sandwhich We have finally made a dent in the left-overs! Monday-Potato soup from freezer (kids had an orthodontist appointment). Tuesday– Cheeseburger pizza. This is a heat and eat meal.  Wednesday–Chicken sandwiches and French fries. Thursday– Shepherd’s pie (another heat and eat) Friday- Sloppy joes and tator tots.
