March in Review

Lily made the statement that March was the longest three years of her life. I am going to agree with her. I am hopefully that things are going to settle down into a sort of quiet different way of life. I know that I will be working from home the entire month of April except for possibly one day this week. Matt will also be working from home for most of the month as well. I am going to guess that my salary from Guam will not occur this month as well. I also want to try and decrease our overall spending. Without leaving home on most days we should be able to hit at least 15 No spend days for the month of April.

Goal #1 Grocery Budget of $550- The actual number is $1025! This did include two rather large trips to Costco and some extra purchases in preparation of staying at home. In more positive news, I was able to find and save $250 for a large meat purchase in the near or not so near future. I will also be using a little as possible from this budget to purchase some additional plants for the garden.

Goal #2 – Record and keep up with gas/ auto purchase- We spent $219 As you can probably guess this is the budget item that I was able to save money for the meat purchase with. Unfortunately in the month of April I will not be able to accomplish this. The large crack in the windshield of the van has expanded and must be replaced. The repair is scheduled for April 9th. We will also need to renew the tags on the car which includes paying for an inspection and taxes. I am hopeful that we can keep all of these expenses under $500 for the month.

Goal #3-Use a cash envelope system for everything possible. Success! I am also going to include the number of no spend days under this goal. For the month of March that is 4. Yikes! But I will say that some of this spending was in anticipation of not spending in April.

Goal #4- Blogging- 15 post per month. This is post number 17 for the month! I am going to plan for the same in April! I will definitely say that the Recipe Challenge is going a long way in making this happen.

Goal # 5- Fitness- Goal is to walk 3 times a week. I can say that for the last week I met this goal. I actually think I have close to 7 days of exercise this month! This is a huge improvement from January and February but is also directly related to being at home and the weather.

Goal #6 – Bible study- Goal- 3x a week – A fail. Definitely need to up my game in this area. 

Goal #7-Attempt at least 52 new recipes this year.-  We actually have tried 7 new recipes this month. I will plan to post on the one tonight either tomorrow or Thursday! I am actually thinking that todays may be a repeat.

Earnings_ $145 in gift cards including a $50 that Matt was able to get outside of Swagbucks. I will be honest and say this will be very low in April. We can already tell a difference in Swagbucks in the last week. My goal for this month is to earn $50 in Lowes cards to purchase plants.

We actually did really well in March when you look solo on the numbers. I am hopefully to keep it going in April. We should not have a lot of extra activities so we should be able to focus on yard and garden work with some catching up on rest as well.

Monday Menu Plan

We discovered last week that a menu plan is even more important than when we are out of the house. We were able to stick to the plan last week except for Wednesday when we ate left-overs. I am very proud to say that we have significantly reduced the amount of left-overs in the refrigerator to a normal amount! I also have been cleaning out some expired food and trying to make sure that we don’t waste. Matt and I both are working from home so lunches are left-overs or sandwiches for us. In an effort to try and develop and stay on a schedule sort of I spent several hours in the kitchen on Sunday. I was able to shred the chicken from Costco, make hamburger patties one set for dinner and froze the rest for quick lunches. Made roll ups for lunch. Hopefully we can stay home and stay on track.

Breakfast– Saturday bacon, eggs and toast. Sunday- Waffles (with an entire batch froze)  Monday, Tuesday,  Wednesday, Thursday, Friday-choice of bagels, breakfast bowls or burritos, breakfast muffins, eggs, sausage, pancakes,  cereal or grits. – Or what ever the school sends. IF I get ambitious this week I may do a baked oatmeal for one morning.

Lunch-  Saturday- Pasta salad with chicken, tomato and cucumber added, Sunday- Left-over from Fridge. Last week the kids had a pizza pocket, hamburger, uncrustable, chicken sandwich and egg roll. Each day they also get at least one vegetable so that adds in. I made pinwheels for myself one day and will eat left-overs or salad. Matt is on his own this week.

Dinner-  Saturday- Left-overs , Sunday- Sandwhich Monday- Hamburgers and tator tots Tuesday-Dorito Chicken ( this is a new recipe) and fried apples. Wednesday- Mandurian Orange chicken and egg rolls, Thursday- Steaks and twice baked potato. Friday-Pizza rolls.

Recipe Challenge #11

Lunch is one of the hardest meals for us. For me, I am a weather eater, if it is warm, I want something cool but definitely nothing steaming hot. In the cold, I can eat soups and heat up left-overs without a problem. To add to the complexity of the situation, I try to limit the amount of bread, I eat on a regular basis. I am a big girl, don’t need all the starch or calories. I saw the recipe for these Ham and Cheese roll up several weeks ago an saved for later. This weekend, the temperature have been in the 80″s, I decided to try and make ahead for my lunch this week. I added the lettuce to the roll up for this week but since I ended up with 5 separate wraps I decided not to add to the others. After slicing into pinwheels, I froze the extra for either this summer or another day that I need some cool lunch. I ended up eating the end of each wrap for my dinner!

The verdict is a resounding YES! Kendall even tried one of the ends and was like these are awesome. They will be a pool staple and something easy to take when traveling as well! Ham and Cheese roll ups are a definite repeat!

Recipe Challenge #10

This was a recipe that I found and tried because it used sweet potatoes and unsweet applesauce both of which I had on hand. You can find the recipe here. It did take about half an hour to cut up the sweet potatoes and the chicken.

The results should be considered mixed at best. The meal was ok. Lily was not able to eat because curry powder has cumin as one of its ingredients. Kendall ate was but not a huge fan because it was a little spicy for her taste. I ate but just because it was there. I was hoping Matt and Zach would really really like it but that did not happen either. I will not be keeping it to repeat. The main reason for this is Lily. I dislike her not being able to eat what we are so I really try not to include ingredients she can’t have.

Crockpot Chicken with Apple and Sweet Potato another one of the not keepers of this challenge. But the good news is that I am starting to catch up. By the end of the week we should be on number 14. I do already have at least one new recipe to try this week. One of the problems that I am running into right now is that we have so many left-overs that I hate to add to the mix unless it is necessary.

Tuesday Thoughts

Technically I am enjoying the final two days of my spring break. I am very thankful to say that I have been able to catch up on the majority of things that I have fallen behind on during the month of February due to illness. We have to finish installing a couple of pieces of trim work and the kitchen/dinning room will be completed. This was a major goal prior to the summer. I am planning to get outside this morning and get some planting accomplished including starting several things outside and I also plan to start some seed trays inside as well. Tomorrow, Wednesday is actually a pay day for Matt. I am going to plan to spend the morning, working on our budget and paying bills. I also need to get a trip to Costco to purchase several things accomplished. I am hoping that Wednesday afternoon is much less crowded than a Saturday but I can not be sure.

The governor announced yesterday that schools in North Carolina will remain closed until May 15th. I am not sure what this will look like for us. Because I work in a different school district than the kids attend, things are getting a little hairy. I will admit that I have been a little snotty about things and really did not want to return to work. But in reality, I am very fortunate to be able to continue to work. The kids are currently able to all three complete school work via the internet. They will all three have a week of Spring Break during April which will cause a bit of complication. I will have Friday and Monday of that week off as well. We are just going to have to set the expectation that they complete their school work and remain civil to each other while Matt and I work. A huge plus is that currently our school district is providing a lunch meal delivery service. The kids will be able to have a lunch provided daily without the need to cook for the entire time they are out of school. I may be able to work from home on certain days but this is so new and different that no one is sure.

On the financial front, with both Matt and I continuing to work we will not see much impact. I will loose at least a month of my income from Guam as school are closed there as well. I am hopeful that once schools reopen there I will be able to schedule and make up for missed time. I have started looking at refinancing our mortgage to get a better interest rate. Otherwise, the only huge expense for us during the next several months is purchasing meat. I am going to start placing money in saving but wait until prices return to a more normal level before attempting to make a huge purchase.

I have been able to enjoy Braxton for serval days during this break. By allowing him to stay with us, his mother is saving the cost of daycare. I am hopeful to be a lot more helpful this summer in this area.

Monday Menu Planning

Last week was mostly a success but this week brings even more uncertainty as I am suppose to return to work on Thursday but I may be given a work from home opportunity but that is still the unknow. Our school district is delivering lunch and breakfast for the following days. On Friday, the kids got a chicken sandwich, carrots and a banana for lunch. Breakfast was a donut and banana. We will definitely be adding to the breakfast as a doughnut is desert not a meal! Two things, you will notice are different this week. First, on Sunday, I did not cook. I was tired and we need to use up left-overs! We also are trying to continue to support local restaurants when it makes senses. Amanda brought over several meals that would not get eaten at her house so currently we have no more room in the refrigerator.

I was able to spend some time taking inventory in both of my freezers this week. We currently have a list of approximately forty-five dinner meals that are available to us. This does not include any meals of left-overs or meals from our panty. My current plan is to start emptying out the freezers and also stashing back some extra money for meat. I am debating on purchasing a entire cow or just simply restocking at the local butcher shop. I definitely want to wait several weeks till people stop hoarding because I don’t want to pay the inflated price.

Breakfast– Saturday sausage biscuits and hash browns. Sunday- find your own. Mom is not cooking.   Monday- cereal for the kids and I ate left-over quiche. Tuesday,  Wednesday, Thursday, Friday-choice of bagels, breakfast bowls or burritos, breakfast muffins, eggs, sausage, pancakes,  cereal or grits. – Or what ever the school sends.

Lunch-  Saturday- Left overs , Sunday- Left-over from Fridge. Matt has packed 2 hamburgers and 2 brat meals for the week. I will be eating left-overs or soup. The kids have school meals. My kids are really excited for this because they are not allowed to eat at school so I am not sure what they will get or if they will eat it. I plan to report next week on the items they received and what we ended up doing with them.

Dinner-  Saturday- Low country boil with hushpuppies(purchased from local resturant) , Sunday-Boneless buffalo wings (purchased from a local restaurant for $20) Monday- left- overs Tuesday- Sloppy Joes and French fries. Wednesday- Mandurian Orange chicken and egg rolls, Thursday- Baked Ziti Friday-Chicken apple and sweet potato crock pot meal (new recipe).

Recipe Challenge 8 and 9

Before I share about these recipes, I decided that I needed to count and confirm how many weeks behind I was on this challenge. Both of these recipes were fairly simple to make. They both also contained ingredients that I had already on hand. 12 is the official answer with number 13 needing to occur before next Friday. I did make sure to include at least one more new recipe for the upcoming week but I also know that sometimes I have to sneak things in as well. It will mainly depend on what left-overs need to be eaten before I start cooking.

Both of these recipes were fairly straight forward and easy to make. I was also able to use items that I already had on hand so they are both considered within our budget.

First on Friday, I made a Kool-Aid pie. It contains 4 ingredients and took less than five minute to complete. Mix together a container of Cool Whip, a can of condensed milk and a pack of Kool-Aid. You can use any flavor but we only had grape Kool-Aid so that is what we used. Place in graham cracker crust and chill for at least two hours. The verdict- not bad, really sweet but honestly probably not something I will repeat.

For dinner on Saturday, I made a low country boil. The recipe was one that I asked my sister in law for. I plan to add a link here! This took exactly an hour to prepare but was really not a lot of effort, just remembering to set the timer. The two bags of shrimp have been in my freezer for approximately a year. The corn on the cob was dated 2017. I used a whole 5# bag of potatoes but ended up peeling the extra potatoes and freezing a batch of mashed potatoes for future use. We did purchase hush puppies from a local restaurant just to help small business. It turned out awesome and it definitely something that we will do again in the future! No picture and very few left-overs make it the perfect meal.

5 things Friday

  1. I am changing the way that I am storing left-overs. I am planning to start storing individual meals instead of putting all into one big container. I have several reasons for this. First, it will make heating up lunch either at work or home much easier for me. Second, it should also make heating up a meal much easier for the kids as well. I am hoping that it will also encourage everyone to grab and use up the items in the fridge.
  2. My plan for today is to spend a significant amount of time outside. The temperature is suppose to be close to 80 today. I need to get some massive weeding done in both the flower beds and also in the square foot garden. My next goal is to determine what seeds I can go ahead and start inside so that I can have a jump start on my gardening for the year. I am not sure how this will all work with school schedule changes due to the cornovirsus but I at least have a plan.
  3. I have 3 new recipes that I am planning to try this weekend. If I am able to get all three done, I will at least be caught up on my new recipe challenge.
  4. This weekend we need to finish the trim work in the hall, install thresholds and adjust one custom cabinet to fit the new floor. I have order new curtains for the pantry and will need to make alternation for them fit.
  5. I am very hopeful that I will have less stress over the next month once it is decide how schools will proceed from here. I don’t mind working and I don’t mind being at home but I strongly dislike the uncertainty.

Recipe Challenge #7

I am very hopeful that with my time at home I can at least get through 10 new recipes. I am keeping that number small because I am expecting to return to work a week from today. If this changes, as I am anticipating it will, I would like to catch up and complete 25 new recipes before the end of April. One of the few limitations that I am going to plan to stick to the next week is to only use items that I already have on hand. This recipe can be accessed via my recipe page or simply click here.

Spinach and Bacon Quiche, I made the quiche yesterday afternoon. We had purchased a 4# bag of spinach , several weeks ago at Costco. We usually use the spinach to supplement our salads. However, salads are not being eaten regular and I did not want to lose this much food. I made creamed spinach last night and also froze a portion of the spinach already cooked to use in a future batch. The two cups that this recipe called for actually finished out the spinach so a double win! This recipe made a full deep 9 inch pan and all 5 of us ate for breakfast with enough for 3 more servings. Everyone said that they liked the Quiche, but of course it had too much spinach for some and too much bacon for others. This would be a repeat with a couple of exceptions. First in the future I will blend the spinach into the egg mixture and it would like be a dinner meal as it took an hour to bake. We just don’t have that kind of time on a normal morning.
