Monday Menu Planning

Genesis 9:3 “Everything that lives and moves about will be food for you. Just as I gave you the green plants, I now give you everything.’

I was lucky enough this past weekend to have some time to prepare ahead meals for this week. I used an rotisserie chicken from Costco to add to the ease of prep.  

Breakfast- Saturday- Cereal which is a treat. Sunday- Peanut Butter and Chocolate Baked Oatmeal. Monday- Tuesday, Wednesday, Thursday Friday– find it (breakfast burritos, muffins, oatmeal, omelets cereal and milk, French toast sticks, sausage, pop-tarts, and eggs, Jimmy Dean Croissants and chicken biscuits.  We have a new box of cereal which is always a treat.  

Lunch- Saturday-left-overs  Sunday- Long Horn Steakhouse  Monday- left-overs   Tuesday,- leftovers Wednesday eat out or leftovers Thursday- salad. Friday- eat out.

Dinner- Saturday- Left-overs or make your own,   Sunday- find it and eat.   Monday-Hamburgers and French Fries  Tuesday- Mexican casserole with chicken.  Wednesday- Cheeseburger Pie  Thursday- Stuffed shells   Friday- Chicken Stuffed shells.

Next weekend will be a bit different as Haley and Lily are flying home for the weekend. 

September in Review

Philippians 3:14  “I press on toward the goal to win the prize for which God has called me heavenward in Christ Jesus.”

The end of September and I am finally feeling like we have finished most of the goals of the summer!  It is still rather warm here, highs regularly above 80 and our air is still running. Last week brought a tropical storm through the area so lets hope for some cooler temperatures soon!

Groceries- Budget $975   $ 1050 Goal Not Met I will say that my grocery list is empty and it probably is around $200 less if I would remove the Christmas items and windshield wipers from my Costco trip this weekend. But I am over.

Blogging- 15 posts per month. This is post number 9.  I do plan to get up a post tomorrow with our menu plan.  This is a significant improvement from last month.

Exercise- Nope none….Pain is a limiting factor.

Summer Goals
1. Kitchen Floor- Complete with a nightmare story. I can’t share due to my agreement. But I was not happy.
2. Bathroom Floor (Matt responsible) – Complete!  We have also managed to build shelving and move most of the items out of our bedroom!
3. New to me car- Purchased and it is the nicest car I have ever owned.
4. Back Deck- The old deck is gone and we are very hopeful to have a new one by the end of October.
5.  Purchase and process a whole cow including canning broth and ground hamburger. DONE!
6. Restock freezer with 100 meals and at least 50 breakfast burritos and 52 packs of bagels. I am going to make this as a success!!!! I am actually surprised and pleased with how much food we currently have on hand!  Added a couple of meals this week so I am counted this as complete!

This will be the last time I report on our summer goals as we did manage to get most completed after all.

I am very hopeful to find my life groove again soon!  It does help to have the house back in order for the first time since May!

Saving on Saturday

I actually spent an entire Saturday at home!  Can you tell I am excited and exhausted!

Matthew 24:6 “You will hear of wars and rumors of wars but see to it that you are not alarmed. Such things must happen, but the end is still to come.”

This is the verse that I woke up with in my head this morning. Sharing it to help explain part of this productive Saturday.  One of my goals for my Summer Break every year and especially the last two years has been to get my freezers and pantries stocked with lots of easy food to prepare. I also want to limit the amount of time I am having to go to the grocery store as well. As you probably are aware, we are really busy around here. This summer I was not able to accomplish this goal but did make a huge dent in it. I was able to get my grocery list down to items we are low on or out of.   Yesterday, after Mom’s appointment we headed to Costco as it was only a 15-minute drive from her appointment.  I was able to entirely clear my grocery list!   This is a huge accomplishment for me as well as part of my Saving on Saturday.   My hope and goal is for the rest of the school year or until at least May of 2025, I am purchasing only items we are completely out of.  This will allow me to limit my shopping to one or two times a month and also limit the amount of money I am spending. I will continue to use Amazon subscribe and save as this is part of the reason for being able to do this!

Now back to the verse…. we are in an election year that is quite contentious.  I don’t discuss politics so that is all you will hear from me. I have discussed with several people the current war in Israel and the rumors of war to follow the election that we are hearing.  The above verse says to me that I can’t change either the war or the rumors, but I should be prepared and not alarmed.  To me a stocked pantry is prepared.

On Friday morning, I was able to pull out several bags of frozen tomatoes from the freezers and started making pizza sauce in the crockpot.  I also pulled out a bag of frozen pizza dough. Dinner plans were for pizza but we decided to throw some chicken on top of the pizza as well.  The sauce came out really well and I was able to can 5 half pint jars and 1 pint jar of sauce for later use. I honestly think this will be enough for an entire year!    I will definitely use this recipe again!  Next time I need to double for a year’s supply!

Today, I have spent quite a bit of time in the kitchen. I even grabbed some extra help from Kendall.  Kendall used a box of cake mix that has been on my shelf for several years to make mini muffins. Both Kendall and Zach have been grabbing up the muffin bites that I purchased on sale. I am hoping that this will work the same and be alot cheaper and a tad bit healthier.   I removed all the chicken from the bones. I was surprised to end up with almost six cups of chicken. I used 4 cups to make a new to us Mexican casserole that we will have on Tuesday.  I had found a recipe for Cracked Chicken stuffed shells.  I ended up cooking an entire box of jumbo shells as that was just easier. I divided the recipe into two pans one for this week and one in the freezer.  Next I wanted to use up the remaining shells so I opened a quart of grounded beef and added a jar of spaghetti sauce to it along with some cheddar cheese.   This ended up making two pans as well.  I topped these shells with provolone cheese which was in the fridge.  So really for less than $10 I ended up with 5 dinner meals and likely 3-4 breakfast meals.

I am very proud of myself today!

Monday Menu Plan

Finally, hopefully getting back in the swing of things. Definitely need a menu plan with the increase in activities. I am also hoping to reduce and keep our grocery budget low!

Saving on Saturday! New Closet

We finally have a completed bathroom! One of the major areas that we ended up saving money on was the closet in the new shower room.

A short history lesson, when we were building the addition, we only contracted out a couple of things. First thing was the footers and block foundation. Our thought process was that this needed to be perfect and right otherwise the entire addition may have problems. Turns out we were right. Unfortunately, the foundation is 3/4 an inch out of square between the part that touches the house to the end. The second part we contracted out was roofing, as we had the old roof replaced as well, we also had the HVAC put in at the same time and both of these are awesome.   So, with a 50% batting average we decided that due to the size of the shower room we wanted to the tile work to be done by someone. Unfortunately, this did not work out. the shower ended up leaking and we have needed to replace the entire floor for a while. This is one of the two remaining items on our summer list.

We are loving our new shower!  We also knew in order to save money we would need to rebuild the closet ourselves.  We have had a rolling laundry basket and metal shelves in place for years.  Both of which have been sitting in our bedroom since the beginning of June.   We actually attempted to put the wire shelves back in place but that did not work. We spent all day Saturday and approximately $150 for this!   I do love the results

5 Things Friday!

Bonus this is my 4th BLOG post this week!  Maybe I can continue!

1. The list of home renovations/updates is shrinking but it feels like we will never finish!   Left to finish
1. paint master bathroom
2.. build shelves in the master bathroom, move items to shelves and relocate metal shelves from the bedroom.
3..Electrical wiring for both front and back
4. After the deck is rebuilt, purchase a new grill.
5. built a covered area to run the generator from.

2. I really enjoyed getting the extra help with the cleaning last week. I am planning to hire another cleaner once the master bathroom is complete. My goal is that this will put me back on a level field and I will be able to maintain the house. This is likely going to become a treat for me maybe every 3 or 6 months depending on my own schedule.

3.  The weather is absolutely gorgeous!  I will likely be opening the window probably during the next week or so.

4. We are heavily into football season.  Zach is currently playing JV, his games are on Thursday night.  Matt, Kendall and Zach are all enjoying attending home varsity games as well.

5. Next week is full of new adventures, the plan is for Kendall to take her driving test and get her provisional license. Zach to get his driving permit!  We also will be traveling to Alabama to attend our niece’s wedding.

 

Tuesday Thoughts

I have mentioned several times that I have been extremely busy and overwhelmed this summer. One of things that I did not have time to do was review and revise the budget.  I took some time on Friday and Saturday to do just that.

Earlier in the month, I switched our cell phone plan to get unlimited data, after several months of overage. My thought was that it would actually increase my overall bill. However, I discovered that it does qualify for the teacher discount which meant just about the same cost.   After a little bit of research, I signed up for paperless billing and automatic billing. This saved me $60. I also decided to remove my ipad from the overall service because I simply am not using it at all.  Overall, these changes should reduce my bill by around $100 a month!

I have decided to not renew my AAA membership. This will save us $135 a year, Our insurance has towing coverage which is what I used it for. Over the summer, we ended up using the towing 3 times. 2 out of 3 times, the truck did not arrive for 3 plus hours.

Overall, our goals are the same. Reduce credit card debit and stay on budget.  My strategy is a bit different. I am going to slowly accumulate cash at home to cover unexpected expenses.  By only using cash or immediately needing to pay off a card when used this should keep things in check.   I will be keeping my emergency fund in cash as well.
