Saving on Saturday

Matt and Zach have been able to finish the deck!  Total spent $0.  I will post those pictures on Wednesday.

Today I split myself several times and actually got a lot accomplished. First, I worked on our taxes. I have always completed my own taxes in recent years with the help of a tax program.  This year was not good we ended up owing 3800 to the Federal government and after some deep digging, I did not find much I could do to change this.

Next up I decided it was a good day to start working toward our garden, so I needed to clean out the greenhouse. I am very happy with the results

I was able to “find” 4 5 gallon buckets of dirt that will be put in the tomato beds after they are completely repaired.

Next a trip to the grocery store with mom, I discovered an awesome deal on soda so this is the result

Finally we added a vertical growing space to the raised beds. I did not get any pictures but will try to include in a garden update.

 

5 Things Friday

  1. The weather continues to be very different.  This week has brought 2 days of beautiful snow (Wednesday and Thursday).  Both the kids and I had a remote day on Wednesday. I had a second remote day on Thursday while the kids had a total day off.  The good news was that it was a very dry snow and mostly melted so we all returned to school on Friday.
  2. Our electric bill was significantly higher than usual this month. It was over $300 to be exact $319.  This is likely due to the cold weather so there is really not much I could do about this.
  3. Speaking of cold, we have realized that both my office and the living room are much cooler than the rest of the house.  We set up small thermometers in both room and have discovered that overnight the temperature drops to 63 degrees in both rooms with the heat pump set at 67* After discussion this is likely not a new problem but something that continues to happen and with the colder temperatures means increasing bills. We have purchased two small heaters to use in these rooms when we are in them.
  4. The 2025 gardening season has started.  We planted pepper seeds and broccoli seeds last Saturday. We actually have a couple of broccoli plants starting. These will likely go outside in the next couple of days.  I am planning to get out and try and straighten out the greenhouse later today. The next big project is to prune both the rose bushes and fruit trees hopefully next week this will be possible.
  5. Kendall and Zach have been participating in a weekly Bible study with some other from our youth group.   They have been meeting at Starbucks but this is expensive and hard to hear. We offered our house and we will be providing drinks and snacks.  This will affect our grocery bill but both Matt and I agree that we don’t want to change this so a higher bill will be the expectation.

Square Foot Garden!

I am so excited today February 16th, 2025, we started seeds for our garden!

The weather FINALLY cooperated with us! Yesterday, it was very cold (38 degrees) and rainy!  We did not get outside at all.  Today started out very rainy, the temperature was 54 degrees this morning so that was a start. After lunch, the rain moved out and we headed out to get a couple of things done. Zach planted two pots of mums from the fall.  Matt and I worked to figure out where exactly the new trees needed to go.  For some reason, I received two of the four trees I purchased.  One of the apple trees and a peach tree arrived.  We hope to receive a second apple tree and a replacement for a pear tree at the end of next week.

I also have been doing some research on dates. I am going to use this as a place to document so next year, I will not be doing the same thing again.
Our last frost date is April 17th.
8 weeks from now is April 17th
Pepper should be started 6-8 weeks prior to the last frost date and need to stay inside for an additional 2 weeks after last frost for the soil temperature to be warm enough to support growth.
Tomatoes need 6 weeks to grow before the last frost day. Around March 1st, I should be starting my tomatoes.
Broccoli takes 50 days to grow, I need to have planted outside before February 27th for a chance to get a small harvest.

Today was a great day to start peppers!  I planted two per cell and will thin and use all the ones that grow as I have not had good germination rates in the past. I planted 12 cells of California wonder bell, 12 cells of monster yellow peppers, 12 cells of mini rainbow peppers and 6 cells of waxman (sweet) peppers.  Total of 84 pepper seeds.

I also planted 6 cells of broccoli to see what happens.

Last but not least, I have a whole bed of radish seed planted about 2 weeks ago for the chickens. I also have a bed of onion seeds planted. Garlic is along the front of the squash beds.

Saving On Saturday

We spent over half the day in Greensboro for the Swim Regional watching both Zach and Kendall.  The weather has changed significantly with the start of February. It was so nice that I was able to work outside with just a light sweater.

I am starting to think about and plan for the garden this summer. I have decided to try and grow cucumbers on a old chain link fence panel that was in the back yard. This meant we needed to move the panel and also secure it to the garden bed.

Next this particular bed was starting to warp really badly so we try to add a couple of pieces of wood to help straighten and prevent huge gaps that dirt can be lost thur.

We also removed a piece of cattle panel from the front that I am bending to use as an arch between the tomato beds. Total cost of garden repair was ZERO!

I was also able to plant some onion seeds and radishes in the container in the side year. I am hopefully to get an onion harvest this year. The radishes are going to the chickens, but I want to use the seeds I have and if they grow 3 or 4 radishes great if not then no harm done. If the weather stays really nice, I may go ahead and plant out some broccoli, lettuce and spinach in the next week or so just to see what we can grow.  It is currently about 11 weeks till our last frost date.

Zach and Matt have been working very diligently on building a bar on the back deck.

I am unsure of how often this will actually get used so I did not want to spend any money. So far they have been able to accomplish this!  All materials are from other projects!  Even the Blackstone is from Luzader’s in Florida. It will require some cleaning and oil before it can be used.

This Saturday was a success!

Garden Plans!

The weather is so cold and miserable that I need to start dreaming of my garden in order to get warm.  But seriously, I am actually right on time to start these plans.

The first thing I did was look up last frost dates again. The last frost day is between April 17th and 24th.  But I will say that I remember years that we have had frost up till and even in May.  My best advice is to use a 10-day forecast on either of those dates before planting outside.  Eight weeks before April 17th is February 21.  This is when I plan to start my pepper plants inside. Six weeks before April 17th is March 6th. This will be my plan date to start my tomatoes.

I feel comfortable using the earliest possible date because of a couple of reasons, first April 17th falls on a Thursday this year. I seriously doubt I will be planting outside on that day. The following week including April 24th is my Spring Break. There is a strong possibility that I will have time to plant outside that week.  The second reason is that both my peppers and tomato plants usually take more time to grow than what is expected. I can’t explain why but that is usually the case.

Now on to my plans!

I want to try and plant a area of corn behind the chicken coop. (This will be my only in ground crop).
I will plant garlic as soon as it arrives in front of where I plan to plant squash and/or zucchini.  Ideally, I would like 2 squash plants and 10 zucchini plants in the 12-foot bed at the back of the building.
Tomatoes will be in the front 2 beds. The bed closest to the road will be slicing tomatoes and the second bed will be Amish paste tomatoes.  I am not planning to plant any Cherokee purple this year as they are slow to produce and not great!   I will be planting a cherry tomato in the short bed across from the deck. I am planning to add a cattle panel to the center of the second bed to make things neater and more organized. The other thing I would like to add is an arch over the top between the two beds to grow loofah sponges on.
Beside the new deck, I am planning to purchase new bags of dirt and cut the sides and tops off. I already have a layer of paper there. This will be the area for watermelon to spread and grow.  I somehow ended up with 3 types of cantaloupe seeds. My plan is to plant one in the round barrel that are on the ground. I may take a chance and plant a second kind in back of my cucumbers to see what they taste like.  I will be planting onions as soon as they arrive in the next week or so. I am hopefully we will have enough cold days to support them.
The other items I want to grow are cucumbers and green beans.  I am going to plan to plant a 10-foot bed with green beans.  I think I will plant cucumbers in the front of my office as we already have a panel for the front of that bed. I may plant some lettuce, and radishes in one of the beds followed up with either cantaloupe or more of what I think we need after the heat kills these plants off. I have a ton of radish seeds so I may attempt to grow this as supplemental food for the dog and chickens.

I am hoping to start some dill and basil in the greenstalk vertical   planter in the front of my house. I also have some lemon balm and Chamille seeds that need to get used. I am hopeful that strawberries will survive the winter and return in one of my planers but buying flowers to fill the planter is always an option as well!

Finally, I have some morning glory seeds that will be thrown in the side flower beds.  I am struggling to find shade plants to fill this area!

So far this year I have purchased 2 new starting trays from Greenstalk and a bunch of seeds from Hoss and some seeds from SheperdingPeppersFarm.com . I still need to purchase basil seeds but hope to not purchase any plants this year!  I will also need to purchase probably 10 bags of soil for the watermelon area.

Saving on Saturday

I actually spent an entire Saturday at home!  Can you tell I am excited and exhausted!

Matthew 24:6 “You will hear of wars and rumors of wars but see to it that you are not alarmed. Such things must happen, but the end is still to come.”

This is the verse that I woke up with in my head this morning. Sharing it to help explain part of this productive Saturday.  One of my goals for my Summer Break every year and especially the last two years has been to get my freezers and pantries stocked with lots of easy food to prepare. I also want to limit the amount of time I am having to go to the grocery store as well. As you probably are aware, we are really busy around here. This summer I was not able to accomplish this goal but did make a huge dent in it. I was able to get my grocery list down to items we are low on or out of.   Yesterday, after Mom’s appointment we headed to Costco as it was only a 15-minute drive from her appointment.  I was able to entirely clear my grocery list!   This is a huge accomplishment for me as well as part of my Saving on Saturday.   My hope and goal is for the rest of the school year or until at least May of 2025, I am purchasing only items we are completely out of.  This will allow me to limit my shopping to one or two times a month and also limit the amount of money I am spending. I will continue to use Amazon subscribe and save as this is part of the reason for being able to do this!

Now back to the verse…. we are in an election year that is quite contentious.  I don’t discuss politics so that is all you will hear from me. I have discussed with several people the current war in Israel and the rumors of war to follow the election that we are hearing.  The above verse says to me that I can’t change either the war or the rumors, but I should be prepared and not alarmed.  To me a stocked pantry is prepared.

On Friday morning, I was able to pull out several bags of frozen tomatoes from the freezers and started making pizza sauce in the crockpot.  I also pulled out a bag of frozen pizza dough. Dinner plans were for pizza but we decided to throw some chicken on top of the pizza as well.  The sauce came out really well and I was able to can 5 half pint jars and 1 pint jar of sauce for later use. I honestly think this will be enough for an entire year!    I will definitely use this recipe again!  Next time I need to double for a year’s supply!

Today, I have spent quite a bit of time in the kitchen. I even grabbed some extra help from Kendall.  Kendall used a box of cake mix that has been on my shelf for several years to make mini muffins. Both Kendall and Zach have been grabbing up the muffin bites that I purchased on sale. I am hoping that this will work the same and be alot cheaper and a tad bit healthier.   I removed all the chicken from the bones. I was surprised to end up with almost six cups of chicken. I used 4 cups to make a new to us Mexican casserole that we will have on Tuesday.  I had found a recipe for Cracked Chicken stuffed shells.  I ended up cooking an entire box of jumbo shells as that was just easier. I divided the recipe into two pans one for this week and one in the freezer.  Next I wanted to use up the remaining shells so I opened a quart of grounded beef and added a jar of spaghetti sauce to it along with some cheddar cheese.   This ended up making two pans as well.  I topped these shells with provolone cheese which was in the fridge.  So really for less than $10 I ended up with 5 dinner meals and likely 3-4 breakfast meals.

I am very proud of myself today!

Menu Planning Monday

This is a hard time of year for me. I am attempting to balance the usage and benefit of prepared meal with continuing to bring things in from the garden and not wasting stuff.  So far, this first week of school is extremely busy but so is this season of life. 

Breakfast- Saturday- Biscuit King Sunday- Strawberry Baked Oatmeal Monday, Tuesday, Wednesday, Thursday Friday– find it (breakfast burritos, muffins, oatmeal, omelets cereal and milk, French toast sticks, sausage, pop-tarts, and eggs). 

Lunch- Saturday-Salsa and chips   Sunday- Gregg’s (local restaurant) Monday- eat out Tuesday,- salad Wednesday eat out or leftovers Thursday- salad. Friday- eat out. 

Dinner- Saturday- Mi Cancun (yes 3 meals out this weekend).  Sunday-Pizza crescent rolls, Monday-Salsa chicken and Mexican rice. Tuesday- Hamburgers, chips and cantaloupe Wednesday- Spaghetti, Thursday- Arby’s on the way to the ballgame   Friday- pepper steak and rice.

Menu Planning Monday

All good things must come to an end. I would classify this summer as extremely busy but good. I needed and enjoyed the 10 day break to Florida but now I must return to work this week.  I am hoping that all my busyness and hard work pays off with an easy start to the school year.

Breakfast- Saturday- Breakfast in the camper Sunday- Bucees on the way home. Monday, ,Thursday Friday– find it (breakfast burritos, muffins, oatmeal, omelets cereal and milk, French toast sticks, sausage, pop-tarts, and eggs). Tuesday- Bagels. Wednesday my plan is to make Baked oatmeal with hopefully preparation of at least 12 dry mixes on Tuesday night.

Lunch- Saturday-left-over from Yak and Yeti.   Sunday- Cracker Barrel Monday- Squash Lasagna Tuesday, -Wednesday, Thursday- salads and pasta salads

Dinner- Saturday- Ford’s Garage.  Sunday-snacks in the Tahoe Monday-Squash lasagna. Tuesday- Pasta Salad Wednesday-Pork chops with green beans and squash, cucumber salad.    Thursday- Eat on the way to the ballgame    Friday- KFC bowls

 

Of course, I did not complete the challenge while in Florida, but I have been strong so far this week.  Sunday- bread crumbs, Monday- Squash lasagna for freezer. Plan for making Enchilada sauce and canning this week as well.

5 Things Friday

  1. One of the areas that I have been struggling with getting and keeping the house clean. For the past many years, I have been paying different kids to complete cleaning around the house. But currently, both the girls are working pretty much every day, so no time for cleaning.  One purchase we have made is robot vacuums’. One for the upstairs, main area of the house and a second for the living room which is down a set of steps.  Matt is in charge of emptying these. It is getting easier to remember to turn them on and I think we have been able to remove all the things that they get caught on.
  2. Our house projects are getting completed. The bathroom and deck should be completed before the end of August. We have decided that we need to have a couple of additional electrical outlets installed including one dedicated for the camper. We still need to order and install a new front door.  One last project will be once the bathroom is done, we are planning to build shelves in the closet area.
  3. I am feeling a bit overwhelmed today. We are heading to me returning to work full time and I still have several things on my personal list that I want to tackle this summer.  I am waking up without an alarm and trying just to do the next right thing. I am actually looking forward to the trip to take Lily as this will force me to just stop and enjoy the ride.
  4. My garden has been so crazy this year.  I have been able to harvest and preserve many items but June was extremely dry and July has been the wettest on record.  I am planning to post pictures because I think my garden looks more like beginning of July instead of the beginning of August. That is not a bad think but may mean lots of preserving even after I return to work.
  5. I had not planned to participate in August in the “Every Bit Challenge”  I return to work in the middle of the month and with our trip at the first of the month I did not think I would be able to preserve much at all. However, that has not been the case so far. Yesterday, I made 3 bags of grilled chicken, 5 bags of cubed chicken and 6 bags of shredded chicken. Today, I canned 5 quarts of broth and made 6 bags of tomato sauce.

Every Bit Counts Challenge

This week has definitely been focused on filling the freezer and pantry for next school year.

On Monday, I went to my favorite farm stand and purchased 4 20# boxes of “canning tomatoes”. In addition to the tomatoes, I also purchased a couple of jalapenos, yellow squash and cucumbers.  Total spent was $65. I also had a trip to Costco where I grabbed 3 roasteries chickens and 3 large bunches of bananas.

Monday evening with the help of everyone, I started the first batch of spaghetti sauce, made a double batch of salsa and got 3 chicken and broccoli casseroles in the freezer. The salsa ended with 10 pints of salsa on the shelf.

Tuesday/ Wednesday the focus was on making and canning the spaghetti sauce.  In total I canned 45 quarts and 12 pints of spaghetti sauce. I am so excited to get this in the pantry!

Today, I was in need of a slower pace day.  I did manage to get a tray of bananas in the freezer.

The goal for Friday, is another batch of salsa, at least one batch of baked beans on the shelf and I have 10 pounds of ground beef in the refrigerator that needs to be cooked and turned into future meals.

The countdown is officially on until the end of my summer!
