Monday Menu Plan

We are on week 2 of no oven. Still going strong and actually no repeats yet!   We have the expectation of the oven arriving next Wednesday (June 16th) but I am not holding that as a promise. The kids are officially out of school!  I am working Monday and Tuesday.  We also are enjoying lots of fresh veggies from the farmer market.

Breakfast– Saturday-Cinnamon Roll waffles  Sunday- Biscuit King Wednesday,- Breakfast bowls minus the gravy. Monday,-  TuesdayThursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.

Lunch-  Saturday–Taco Bell    Sunday- Gregg’s  I assembled a pasta salad and Matt has hamburgers to round out his week.

Dinner-  Saturday-  Graduation party    Sunday-Left-overs (only once this week!)   Monday-Grilled Chicken with zucchini and broccoli.  Tuesday-Arby’s due to piano and ball game  Wednesday- Hot Dogs and Tator tots  Thursday- Costco chicken and squash Friday-Soft tacos.

Menu Planning

This is definitely a different week.  First today is Tuesday and I am just now posting a menu plan.  The reason is Memorial Day and the end of the month.   I also really want to get my 15 blog post this month!   Second, our oven is currently not working and it will be mid-June at the earliest before we have the new one installed. And the biggest reason the school count down is on!  I have 5 days to work for the year.  I can see the end now just to make it! But those 5 days also include one or more activities after school and late meeting on most.  Busy the normal we are use to! This should also be one of the last weeks that we NEED to eat out for our sanity. I am hoping to start only eating out on the weekends.

Breakfast– Saturday-bacon and egg salad sandwiches on toast Sunday- Items from the freezer before church.  Monday,- Biscuit  Tuesday,- Breakfast bowls minus the gravy.  Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.

Lunch-  Saturday–Sushi buffet for our anniversary   Sunday- Chinese   I assembled a pasta salad and left over pizza or dippin days make it easy this week.

Dinner-  Saturday-  Left-overs (YES there is a end in sight!)   Sunday-Hamburgers   Monday-Spinach Ravioli  Tuesday-Pizza from local place    Wednesday- Chicken sandwich and Fries  Thursday- Ballgame Food  Friday-Steaks and potatoes- not sure how yet but will make it happen.

Monday Menu Planning

Trying something new this week. I have 3 different casseroles on the menu. IF they are good then this will give us another option for busy night next fall.  It did take about 2 hours to do all the prep on Sunday but this included lunch making as well.  We actually have a handle on the left-overs as well.   Now to stay the course.

Breakfast– Saturday-Matt and I went to a local restaurant  Sunday- French Toast  Monday, Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, pop-tarts, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets.  Need to finish eating down lots of extra helpings.

Lunch-  Saturday–Left-overs   Sunday- Left-over Chinese   I assembled salads,  and a pasta salad  The kids will eat left-overs  on Wednesday.

Dinner-  Saturday-  Chinese   Sunday-Kids are sick…we ate chicken nuggets  Monday-Baked potato casserole (kids Really liked it)  Tuesday-Southwest Casserole   Wednesday- Taco Bell  or Ballgame Thursday- Spaghetti casserole Friday- Zach and Kendall are going to Haleys’ so who know?

Sunday Thoughts

  • We have 22 days of school left. 20 for the kids. I have an additional 2 workdays (Monday June 7th and Tuesday June 8th).
  • Today is Mother’s Day.  My gift was being woken up at 12 am with Zach throwing up.  Lily started getting sick at 2am. I have been up and down with them most of the day. Hopefully no one else will get this lovely bug.
  • On Thursday, Kendall had seizure like activity and was rushed to the Emergency Room. We currently have no answers and lot of questions. She has an appointment on May 19th.
  • I am trying something new and some different recipes this week. I made 2 casseroles that just need to be cooked. I will make a third one on Tuesday so each day will be heat and eat.  I am hopeful that we can add these into the rotation as we are getting bored again of the same food. I am also trying to use up things in my freezers to make room for summer produce.
  •  We have purchased a batting cage for Zach.  The old swing set was taken down and we are currently waiting on rubber mulch to begin installing the cage. He is continuing t make improvements with his skills and really enjoying the game.
  • Matt and I added grids to the garden beds today. We currently have lots of things growing. I am also planning another planting at the end of May to extend the growing session.
  • I decided just this week that I will continue to work in Guam on Sunday nights all during the summer. This will allow me to keep some contacts and also supply the extra money needed for the outside projects we have been working on.

Menu Planning Monday

5 weeks left of the school year with not a break in sight until after then.  After cleaning and organizing the freezers this week, I want to keep grocery spending as low as possible while continuing to stock up on different items to make things easier in the fall.  I am very proud of the amount of left-overs we are managing to get rid of this week!

Dinner-  Saturday-  Left-overs again    Sunday-country style steak (left-overs) made some instant mashed potatoes to go with it.  . Monday-Chicken and green bean casserole. (new recipe)  Tuesday-chicken nuggets and French Fries  Wednesday- Taco Bell or Chinese or Ballgame Thursday- Sloppy Joes and Tator tots  Friday- Grilled chicken

Monday Meal Planning

I am finally catching up on life around here. I have been doing some reading over the last several days. What I am seeing is that food prices are going to continue to rise.  Here are some thing I am doing to stretch our food budget.  For lunch made a box of pasta salad added tomatoes, chicken, cucumbers and peppers this was divided up for 4 lunches.  Purchased a rotisserie chicken, used for one meal, then add some to pasta salad and remained for sandwiches.  Cooking with what is on sale. I found cabbage for eighteen cent a pound. I bought one head, made cole slaw and will use the rest in egg roll in a bowl.  And of course the biggest money saver MENU Planning

Lunch-  Saturday–Bad Daddy’s for Matt’s birthday   Sunday- Long Horn Steak house.    I assembled salads, a pasta salad  and hamburgers on Sunday. The kids will eat left-overs  on Wednesday.

Dinner-  Saturday-  Chicken from Costco, slaw and cresant rolls    Sunday-left-over or muffins . Monday-Steak ums and French Fries   Tuesday-Pizza  Wednesday- Egg Roll in  a bowl   Thursday- Chicken pot pie    Friday- BBQ Pork.

Monday Menu Post on Tuesday

I did come up with a menu plan this week. Really trying to stick to it and use what we have.

Breakfast– Saturday-Biscuit King   Sunday- eggs and sausage links   Monday, Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets. New  breakfast muffins included sausage and potato muffins and veggie scrambles.

Lunch-  Saturday–Applebee’s   Sunday- Taco Soup .   Salads were again on the menu along with left-overs

Dinner-  Saturday-  Philly Cheese Steak casserole Sunday-left-overs Monday- Chicken pot Pie Tuesday- Oyster Stew or Tomato Soup due to needing to use up milk from the fridge  Wednesday-Burger King or Arby’s     Thursday- Baked Spaghetti     Friday- Pork Chops.

Monday Menu Planning

After a full month of left-over soup, find it and take-out, I am back on track with meal planning. I have the additional goal of keeping our groceries as low as possible for the month with any and all extra money going to our Disney trip in April. Another huge positive is that I am actually working less hours in Guam so I have a tiny bit more time to cook and such. On Sunday, Matt and I tackled breakfast muffins for the week. The goal was to make something quick and easy since we don’t have bagels this week. The kids were gone all weekend to Haley so Matt and I splurged alot and enjoyed not cooking or washing dishes.

Breakfast– Saturday-Biscuit King   Sunday- Biscuit King  Monday, Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, sausage, oatmeal, cereal or grits, breakfast burritos, or omelets. New  breakfast muffins included sausage and potato muffins and veggie scrambles.

Lunch-  Saturday–Burger King   Sunday- Time Square Pizza.    I assembled 6 salads on Sunday. The kids will eat left-overs and Matt also has 2 hamburger sliders to enjoy.

Dinner-  Saturday-  Mexican    Sunday-left-over or muffins . Monday-Steaks and Baked Sweet Potato  Tuesday-Baked Ziti that was found in the freezer.  Wednesday-Corn Dogs and FF.    Thursday- Hamburger Helper    Friday- Steak fataji  or Steak fried rice depending on my mood.

What’s Up?

  • I wanted to share this in case any one wonders why my blog post are so sparse this month. The other probably more important reason to share is so that three or more years from now, I can remember why I can’t work 2 jobs.  Currently I am averaging an additional 15 hours a week in Guam. This is in addition to my regular 40 hours at Davie County Schools.  This week, I did receive several emails that Promise to  begin lighten my load over the next month or so.  The idea that they have hired 3 more therapist and when everything is said and done I will lose hopefully half my caseload shows a better picture of how busy I really.
  • Washer update- The pump is bad as well… currently waiting on the new pump to arrive, I honestly have no clue what the cost will be so…..
  • Making BIG plans for the garden this year, I am going to completely re-arrange and re-do the whole thing.  First it will be significantly taller. This should reduce the amount of dogs that decide they like it. Second it will make it much easier for me to work and maintain without bending over so  much. I am anticipating a huge expense but also hope to re-use as much as possible from the existing.
  • Our final Disney trip for at least 2 years is 50 something days away. I am currently working on saving the money to cover our food expenses. Not sure how much we will end up with especially with the washer repair a still unknown.
  • Goal of this week is no food waste, I have a plan and the refrigerator is nicely stocked. So far this month we have spent $172.74.I was planning on a trip to Costco but still not sure where to fit that in at either so I may try to make it to March before adventuring to Costco.

Menu Planning Monday

I just want a normal week is it possible?  I received a phone call on Sunday afternoon that one of Zach’s classmates has tested positive for Covid-19. He is on quarantine and can’t return to school until February 4th.  I am going to work remotely Wednesday, Thursday and Friday this week….. In other news it is cold and rainy, so I am changing up plans to include lots of soup. I am also continuing to work 5 nights a week in Guam which means less fuss for meal time.

Breakfast– Saturday-homemade biscuits and gravy  Sunday- Breakfast bowls  Monday, Tuesday, Wednesday, Thursday, Friday-choice of breakfast muffins, eggs, sausage, oatmeal, cereal or grits, breakfast burritos, bagels or omelets.

Lunch-  Saturday–Left-overs  Sunday- Gregg’s   Everyone is enjoying left-overs or wraps this week.

Dinner-  Saturday-  Stuffed Green Pepper Soup   Sunday-left-overs. Monday-Kielbasa and rice. Tuesday-I made oyster stew and others can eat from fridge . Wednesday- Instapot Beef and Broccoli (new recipe)   Thursday- Chicken Spaghetti   Friday- Salisbury Steak and scallop potatoes, green beans and corn bread.
